Kırmızı biber kurutmada kullanılan güneş enerjili bir kurutucu performansı

Özet
Bu çalışma zorlamalı konveksiyonlu güneş enerjili bir kurutucu tasarımını ve kırmızı biber (Capsicum annum) kurutmada kurutucu performansı sonuçlarını içermektedir. Güneş enerjili kurutucu güneş enerjisini absorbe ederek kurutma odasına aktaran hava ısıtıcı kolektör ve kurutulacak ürünün raflar üzerine yerleştirildiği ve kurutmanın gerçekleştirildiği kurutma odası olmak üzere iki kısımdan oluşmaktadır. Kurutma işlemi, kurutma havasının kurutma odasına giriş hızı 1.25 m/s ve her bir biber 8 eşit parçaya dilimlenerek gerçekleştirilmiştir. Kurutma odasına konulan 5 kg taze biberin başlangıç ağırlığının %20'sinin altına düşene kadar kurutma işlemi devam ettirilmiştir. Isı transferi eşitliklerinden yararlanılarak hava ısıtıcı kolektör verimi $(eta_c)$ % 45 ve sistemin kurutma verimi ise $(eta_k)$ % 31 bulunmuştur. Toplam 1,6 kg kırmızı biber açık havada güneş altında kurutulmuştur. Açıkta kurutulan biberler toplam 37 saatte ilk ağırlıklarının %14'üne, buna karşın kurutucu içerisinde kurutulan biberlerin ilk ağırlığının %20'sinin altına düşmesi yaklaşık 46 saat sürmüştür. Bu denemede açık havada daha hızlı bir kurutma sağlanmasına karşın, L-askorbik asit (C-Vitamini) ve renk seviyeleri incelendiğinde kurutucu ile kurutulan biberlerde elde edilen değerler açıkta kurutulan biberlerden daha yüksek olmuştur. Bu denemede güneş kolektörü ile dış ortam havası sıcaklığı 30°C'ye kadar yükseltilerek kurutma odasına kurutma havası olarak gönderilmiştir.
Abstract
This research includes the design and manufacture of a solar dryer and its performance test on red pepper drying. The solar dryer consists of two parts; the air heating section (solar collector) and the drying chamber section with five trays. The drying test was conducted after setting the drying air speed at 1.25 m/s at the drying chamber entrance and the peppers were sliced into 8 equal pieces. The drying process continued until the total pepper weight in the drying chamber reduced to 20 % of the initial weight (5 kg). Both the solar collector efficiency ( $eta_c$ = %45) and the system drying efficiency ( $eta_k$ =%31) were calculated using the heat transfer equaitons. Total of 1.6 kg pepper was sun dried in an open environment. The weight of the sun dried peppers were reduced to the 14 % of'their initial weight in 37 hours whereas it took 46 hours for the peppers in the drying chamber to reduce 20 % of the initial weight. Even though a more rapid drying could be established with sun drying, the L-ascorbic acid and the color levels of the peppers dried in the solar dryer were higher than the sun dried peppers. During this test, the solar air heating section was able to increase the drying air temperature 30 °C above the ambient air temperature and transferred to the drying chamber as the drying air.
