Present situation and problems of pistachio processing plants and recommendations

Özet

Bu çalışmada, antepfıstığı işleme tesislerinin mevcut yapıları ve olası sorunları araştırılmıştır. Bu amaçla Şanlıurfa ve Gaziantep illerinde bulunan 15 farklı antepfıstığı işleme tesisinin mevcut durumu, iş kapasitesi, işlem akışı, iş etkinliği ve mevcut problemleri incelenmiştir. Çalışma sonucunda işleme tesislerinin çoğunluğunda mekanizasyon düzeyinin yetersiz olduğu belirlenmiştir. İşleme tesislerinin yaklaşık olarak % 50'si açık alana sahip olup küçük boyutlu işletmelerdir. İncelenen işleme tesislerinde yıllık işleme kapasiteleri 1000-2000 ton düzeyindedir. İşleme tesislerinin tamamında soyma ünitesi mevcut olup % 70'inde sınıflandırma makinesi bulunmaktadır. Buna karşın sadece iki adet işletmede paketleme ünitesinin olduğu belirlenmiştir. İşletmelerin en önemli sorunları olarak çıtlatma ve iç yapma makinelerinin işletmelerde bulunmaması gelmektedir.

Abstract

In this study, post harvest processes of pistachio are investigated, the mechanization level of which has been increasing rapidly in recent years. For this purpose, the present state, of work capacity, operation flow, work efficiency and peresent problems of 15 different processing plant of pistachio have been examined. As a result, it is determined that the mechanization levels of most of the examined processing plant are inadequate. Approximately 50 % of the processing plants have open field. These plants are of small size, and their yearly processing capacities are 1000 - 1200 tons. All of the examined processing plants have roasting units. A gradiation machine is available in 70% of the processing plants. However, only two plants have a packaging unit. At the top of the greatest problems of the plants, the lower quality pistachio cracking and core obtaining machines can be listed.
