Özet

Bu çalışma, farklı oranlarda koyun, inek ve keçi sütü karıştırılarak, iki farklı yöntemle üretilen Van Otlu peynirlerinin kimyasal ve fiziksel özellikleri ile proteoliz düzeylerinde olgunlaşma periyodunda meydana gelen değişimleri incelemek amacıyla yapılmıştır. Üretimde kullanılan iki farklı yöntemden birincisinde; geleneksel üretim tekniği kullanılarak pastörizasyon uygulaması ve kültür katımı söz konusu olmadan peynirler üretilmiştir. İkinci yöntemde ise endüstriyel olarak hem süt hem de kullanılan otlar pastörize edilmiş (65 °Cde 30 dk.) ve starter kültür kullanılmıştır. Üretilen peynirlerden 2.; 30.; 60.; 90. ve 180. günlerde örnek alınarak, kimyasal ve tekstürel analizler ile bazı biyokimyasal analizler [proteoliz, suda çözünen azot (WSN), protein olmayan azot (TCA-SN) ve amino azot (PTA-SN)] yapılmıştır. Abstract

In this study, the chemical and textural changes and proteolysis profiles of Herby (Otlu) cheeses made from appropriate mixtures of raw and pasteurized ewe s, cow s and goat s milks were determined during ripening. In the first method; herby cheeses were produced without pasteurization and starter culture addition while herbs and milks were pasteurized (at 65 °C 30 min) and starter culture was used in the second method. The samples were taken for chemical, textural and some biochemical [proteolysis, water soluble nitrogen (WSN), non-protein nitrogen (TCA-SN) and aminonitrogen (PTA-SN)] analysis with 30-day intervals for 180 days of ripening.
