Süt ve bazı süt ürünlerinde Staphylococcus aureus' ların bulunma sıklığı üzerine bir araştırma

Özet
Bu çalışmada Ankara'da tüketilen kutu ve şişe pastörize sütleriyle dondurma ve kremalı pasta örneklerinde Staphylococcus aureus'ların bulunma sıklığı araştırılmıştır. 54 adet pastörize süt, 40 adet kremalı pasta ve 30 adet dondurma materyal olarak seçilmiştir. Staphylococcus aureus pastörize şişe süt örneklerinde % 55.0, pastörize kutu süt örneklerinde % 40.8, kremalı pasta örneklerinde % 87.5 dondurma örneklerinde % 36.7 bulunmuştur. Halk tarafından sıklıkla tüketilen ve araştırmamıza konu olan bu ürünlerde Staphylococcus aureus'ların izole edilmiş olması dikkate değer bir bulgudur.
Abstract
In this study, the rate of isolation of Staphylococcus aureus in pasteurized and bottled or boxed milk, ice cream and pastry with cream consumed in Ankara is investigated. 54 bottle or box of milk, 40 piece of pastry and 30 ice cream which had randomly been selected have been used as samples. The rate of presence of the Staphylococcus aureus in the samples of bottled milk, boxed milk, pastry with cream and ice cream are found 55.0%, 40.8%, 87.5% and 36.7% respectively. Proper care should be given to the isolation of the Staphylococcus aureus from such foods which are widely consumed and subject to our investigetion.
