Özet
Mastitis süt sığırı işletmelerinde en karmaşık ve en masraflı hastalıklardan birisidir. Mastitisin neden olduğu ekonomik kaybın yaklaşık %67’si süt üretim kaybından ileri gelmektedir. Ayrıca mastitis olgularında süt kalitesi de önemli ölçüde değiş- mektedir. Süt içerisindeki somatik hücre sayısı ve toplam bakteri sayısı artarken, sütün biyokimyasal yapısı değişmektedir. Bu değişiklikler sonucu üretilen süt ürünlerinin lezzeti bozulur, saklama ömrü kısalır. Günümüzde süt üreticileri ürettikleri sütün kalitesine göre prim alırlar ve bu durum üreticilerin karlılığını etkileyen ve global ekonomide ayakta kalmalarını sağlayan önemli bir faktördür. Bu amaçla süt üreticileri ürettikleri sütün niceliğiyle birlikte niteliğine de önem vermek zorundadırlar. İşte bu nedenlerden ötürü bu makalede mastitisin neden olduğu verim kaybı ve süt kalitesiyle ilgili değişikliklere dikkat çekmek amaçlanmış, sürü meme sağlığı yönetiminde somatik hücre sayısının önemi vurgulanmıştır.
Abstract
Mastitis is one of the most complex and costly diseases of the dairy industry. Approximately 67% of the total economic loss caused by mastitis is due to decrease of milk production. Furthermore, in mastitis events, the quality of milk is also changed importantly. As the somatic cell count and total bacteria count in milk increase, the components of milk also changes. Because of these changes, the tastes of the products are reduced and the shelf life of them decreases. Nowadays milk producers take quality premiums depending on the milk quality and this situation affect the benefit and viability of producers in global economy. For this purpose, the milk producers have to emphasise on milk quantity as well as the quality. Depending on these reasons in this paper, the aim is to take attention on the loss of production and changes in the milk quality and the importance of somatic cell count in herd udder health management was emphasized.
