Özet

Uzun raf ömürlü gıda maddelerinde koruyucu katkı maddesi olarak kullanılan sodyum nitrit (NaN02)'in in vivo da kanserojen N nitroso bileşiklerine dönüşebileceği bilinmektedir.

Abstract

t's known that sodium nitrit (NaN02), which is being used as a protector in nutriment materials that has a long shelf life, could be changed to cancerogen N nitroso compounds in vivo. Some substances which show antioxidant characteristics might prevent the formation of N nitroso compounds. Chlorella vulgaris which is rich in mineral, vitamin and fenolic groups and has antioxidant characteristic is a fresh water alga that has a special place in Far East diet. This study was planned of 6 experiment and 2 control groups (n = 10). Group 1: NaN02 30 mg/kg (subcutaneous) + Chlorella vulgaris 200 mg/kg (orally) were treated to male rats in every other day. Group 2: NaN02 30 mg/kg (subcutaneous) was treated to the male rats in every other day. Group 3: Chlorella vulgaris 200 mg/kg (orally) was treated to the male rats in every other day. Control 1: Serum physiological that has the same volume with NaN02and Chlorella vulgaris was treated to the male rats in every other day. Group 4, Group 5, Group 6 and control 2 which were made up of female rats were treated with the same procedure as the male groups. At the end of the 2 months of experimental period, lipid peroxidation and protein oxidation levels were determined in liver tissue samples which were taken by sacrification under ether anesthesia. When lipid peroxidation values were compared between male experiment groups and Control 1, significant differences at p
