Özet
Alternatif turizme olan ilgi her geçen gün artmaktadır. Alternatif turizmde önemli gelişim gösteren türlerden bir tanesi de kruvaziyer turizmidir. Bu turizm çeşidinde hem seyahat etmek hem de farklı birçok destinasyona giderek buraları tanımak temel amaçtır. Gemi seyahatinde insanın temel gereksinimi olan beslenme ihtiyacı da karşılanmaktadır. Bu ihtiyacın karşılanması için seçilen personel ve ürünler konusunda dikkat etmek gerekmektedir. Yapılan çalışmada Avrupa’da nehir üzerinde tur düzenleyen bir gemide çalışan 5 mutfak personeli ile yüz yüze görüşmeler gerçekleştirilmiştir. Çalışmada nitel araştırma yöntemlerinden yarı yapılandırılmış görüşme tekniği uygulanmıştır. Görüşme yapılan kişilerde gönüllülük esası aranmıştır. Araştırma bulgularında, gemi mutfağında çalışanların farklı ülke vatandaşları olduğu görülmüştür. Gemi mutfağında hazırlanan menüler ziyaret edilen destinasyonda yer alan ürünlerle hazırlanmaktadır. Gıda muhafazası konusunda azami dikkat gösterilerek müşteri sağlığını korumak amaçlanmıştır. Müşteri memnuniyeti kapsamında menüler et, deniz ürünleri, makarnalar ve vejetaryen olarak hazırlanmaktadır. Literatür taraması sonucunda gemi mutfağı ile ilgili çalışmaların eksikliği dikkat çekmiştir. Gemi mutfakları konusunda yapılan çalışmaların az sayıda olması bu çalışmanın önemini artırmaktadır.
Abstract
There is a growing interest into alternative tourism. Cruise tourism is one of the types of alternative tourism which is showing significant development. In this type of tourism, the main purpose is to travel and to familiarise oneself with many different destinations. Nutrition, which is a basic human necessity is also met during the duration of the cruise. The personnel and products selected to meet this need is crucial. The study focuses on face-to-face interviews conducted with 5 kitchen staff working on a cruise ship that operates in European rivers. A semistructured interview technique which is a qualitative research method, was used in the study. Interviewees were selected on a volunteer basis. According to the findings of the research, the kitchen staffs of the ship were nationals of different countries. The menus prepared in the kitchen of the ship are prepared with the products found in the visited destination. Customer health is held as a top priority with maximum attention paid to food preservation. Menus are prepared as meats, sea food, pastas and vegetarian considering customer satisfaction. As a result of a literature review, the lack of studies regarding ship kitchens has attracted attention. The low number of studies on ship kitchens increases the importance of this study.
