Özet

Yoğurt dondurması, yoğurdun besleyici özellikleriyle dondurmanın hoşa giden soğukluğunu bir arada içeren bir süt ürünüdür.Bu çalışmada, inek sütünden yapılan sade (vanilyah) ve meyveli (çilekli) yoğurtlardan dondurma üretilmiş ve -23°C'deki derin dondurucuda 12 hafta süreyle depolanmışlardır. Bu depolama süresince mikroorganizma içeriklerinin belirlenmesi açısından toplam aerob mezofil bakteri, toplam aerob psikrotrof bakteri, koîiform, maya-küf ve laktik asit bakterileri incelenmeye alınmışlardır.Toplam aerob mezofil bakteri, toplam acrob psikrotrof bakteri ve küf sayılarında depolama boyunca bir düşüş saptanmıştır, örneklerin hiçbirinde koîiform ve mayaya rastlanmazken, laktik asit bakterilerinin sayılarında belirgin bir düşüş gözlenmemiştir. Yoğurt dondurması örneklerinin meyve ve şeker içeriklerinin farklı olması ise depolama süresince mikrobiyolojik kalite açısından bir farklılık göstermemiştir.

Abstract

Yoghurt ice cream is a milk product which provides nutritive properties of yoghurt and refreshing quality of ice cream at the same time.In this research, vanilla ice cream and strawberry ice cream were produced by yoghurt made by cow's milk. These were then stored at -23°C for 12 weeks. During this storage period, the total number of aerob mesophilic bacteria, psychrotropic bacteria, coliform bacteria and yeast and mould, as well as the presence of lactic acid bacteria were identified in all samples.The results indicated that the storage period reduced the number of total aerob mesophilic bacteria, psychrotropic bacteria, and mould. Yeast and coliform were found in none of the samples. The ice cream samples contain high levels of lactic acid bacteria even after 12 week of storage. However, the composition of ice cream samples did not affect the nricrobial quality in any stage of the storage period.
