Özet
Et ve et ürünlerinde kullanılan et türlerinin belirlenmesi, ekonomik nedenlerin yanında insan sağlığının koruması için de önem taşımaktadır. Bu çalışmada, İzmir İli ve çevresinden Bornova Veteriner Kontrol ve Araştırma Enstitüsü’ne getirilen toplam 116 et ve et ürünü, ELISA (Enzyme-Linked İmmuno Sorbent Assay) ile incelenmiştir. Analiz sonucunda toplam 116 örneğin 76’sında (% 65.5) sığır eti, 27’sinde (% 23.3) sığır / tavuk eti karışımı, 7’sinde (% 6.0) tavuk eti, 3’ünde (% 2.6) domuz eti, 2’sinde (% 1.7) at eti ve birinde (% 0.9) sığır / domuz eti karışımı tespit edilmiştir. Çalışma sonuçları ile incelenen örneklerin etiket bilgileri karşılaştırıldığında, 18 (% 15.5) örneğin etiket bilgilerinden farklı et türlerini içerdiği saptanmıştır. Sonuç olarak, İzmir İli’nde imal edilen et ve et ürünlerine farklı hayvan türlerine ait etlerin karıştırıldığı tespit edilmiştir.
Abstract
The detection of meat types used in meat and meat products is important because of economical reasons as well as the protection of human health. In this study, 116 meat and meat products from Izmir province that received by Bornova Veterinary Control and Research Institute have been analysed with ELISA (Enzyme Linked Immunosorbent Assay). It was determined that from 116 samples 76 were beef (% 65.5), 27 were a mixture of beef and chicken (% 23.3), 7 were chicken (% 6.0), 3 were pork (% 2.6), 2 were horse flesh (% 1.7) and one of them was a mixture of pork and beef (% 0.9). When the information on the labels of these 116 samples were reviewed, 18 of the samples (% 15.5) were found to contain meat kinds that were different from the notifications on the label. Consequently, it was determined that meat and meat products that had been produced in Izmir were mixed with meat belonging to various animal species.
