Özet

Bu çalışmada, İzmir İli ve çevresinden Bornova Veteriner Kontrol ve Araştırma Enstitüsü'ne getirilen toplam 121 adet çiğ et ve et ürünü, tür tespiti amacıyla AGID (Agar Gel Immuno-Diffusion Test) yöntemi ile incelendi. Analizler sonucunda toplam 121 örneğin 75 (% 62.0)'inde çift tırnaklı eti, 31 (% 25.6)'inde kanatlı eti, 8 (% 6.6)'inde çift tırnaklı / kanatlı eti karışımı, 3 (% 2.5)'ünde tek tırnaklı eti, 2 (% 1.7)'sinde domuz eti, 1 (% 0.8)'inde çift tırnaklı / domuz eti ve diğer 1 (% 0.8)'inde ise çift tırnaklı / tek tırnaklı eti karışımı tespit edildi. Çalışma sonuçları ile incelenen örneklerin etiket bilgileri karşılaştırıldığında, 15 (% 12.4) örneğin etiketlerinde bildirilenlerden farklı et türlerini içerdikleri belirlendi. Sonuç olarak, İzmir İli'nde imal edilen çiğ et ve et ürünlerine farklı hayvan türlerine ait etlerin karıştırıldığı tespit edildi.

Abstract

In this study, a total of 121 meat and meat products received by Bornova Veterinary Control and Research Institute were analysed by using AGID (Agar Gel Immuno-Diffusion Test) technique. It was determined that of the 121 samples analysed, 75 (62.0 %) were ruminant, 31 (25.6 %) were poultry, 8 (6.6 %) were a mixture of ruminant and poultry, 3 (2.5 %) were equine species, 2 (1.7 %) were pork, 1 (0.8 %) was a mixture of equine species and ruminant, and 1 (0.8 %) was a mixture of pork and ruminant. When the information on. labels of these 121 samples were viewed, 15 (12.4 %) samples were found to contain meat kinds that were different from notifications on the label. Consequently, it was determined that meat and meat products produced in Izmir province were mixed with those belonging to various animal species.
