Özet

Gıda kaynaklı ve zoonoz özellikteki parazitler, insanlarda enfeksiyonlara ve ölümlere neden olabilmektedir. T. gondii enfeksiyonları, toplumların kültür ve geleneklerine göre çeşitli et ve et ürünlerini çiğ veya az pişmiş olarak tüketmelerine bağlı olarak hemen her ülkede görülmektedir. Dünya nüfusunun yaklaşık üçte birinde mevcut toksoplazmozun antibiyotik ve antiparaziterlerin doku kistlerine etkisindeki yetersizlik, tedavideki gecikme ve buna bağlı olarak iş gücü kayıplarındaki artış sebebiyle ekonomik külfetinin yüksek olduğu belirtilmektedir. Enfeksiyondan korunmada birçok yöntem geliştirilmiş olmakla birlikte bir kısmının pratiğe aktarılmasında çeşitli güçlüklerle karşılaşılmaktadır. Kesim öncesinde uygulanabilecek standardize edilmiş serolojik bir test geliştirilememiştir. Kesim sonrası yapılan mikroskobik teşhislerde parazit dağılımının homojen olmaması nedeniyle hata payı yükselmekte, PCR tekniğine dayalı testlerden ise enfektif parazitleri belirlemeye yönelik sonuçlar elde edilememektedir. Bu nedenlerle, seropozitiflik oranlarının yüksek olduğu koyun ve keçi gibi kasaplık hayvanların et ve organlarına yerleşik doku kistlerinden ileri gelen enfeksiyonlar önem kazanmaktadır. Bu kistleri içeren çiğ veya az pişmiş etlerin tüketimi, insan toksoplazmozisinin ana kaynağı olarak gösterilmektedir. Doku kistlerinin inaktivasyonunda en güvenilir yöntemin ısı işlemi uygulaması olduğu bildirilmekle beraber, alternatif bir işlem olarak ta etlerin dondurulması tavsiye edilmektedir. Gama ışını uygulaması veya yüksek basınç teknolojisinden ise et tekstürünün etkilenmesi nedeniyle istenilen sonuç alınamamaktadır

Abstract

Food-borne and zoonotic-featured parasites in humans can cause infections and deaths. T. gondii infections are seen in almost every country depending on the community consuming various meat and meat products raw or undercooked. The current toxoplasmosis that presents in approximately one third of the world causes economic burden because of insufficiency effects of antibiotics and antiparasitics on the tissue cysts, retardation in treatment and increasing losses in labour force. Although numerous methods have been developed for protection from toxoplasmosis,there are still some difficulties in putting them into practise. A standardized serological test is not available to apply before slaughtering. The margin of error is higher in microscopic diagnoses from tissues after slaughtering due to the parasite distribution is not homogeneous and the results for determining infective parasites cannotbe obtained from tests based on the PCR technique.For these reasons, the infections caused by tissue cysts localizedin meat and organ of slaughtered animals such as sheep and goats have relatively high rates of seropositivity. The consumption of undercooked or raw meat containing cysts has been indicated as the main source of human toxoplasmosis. Although the heat treatment has been reported to be the most reliable method for inactivation of tissue cycts, freezing the meat has also been advised as an alternative treatment. The desired results were not obtained from the gamma rays or high-pressure technology because of the influence on meat texture
