Özet
Birçok farklı kültürel unsura sahip olan Anadolu’da, yeme içme kültürünün önemli bir ürünü olan pekmez,yapım geleneği ve bu kültüre ait alanlar/mekânlar, özgün yönleri ile nitelikli olup değerlendirilmelidirler.Değişken ve dinamik bir kavram olan kültür içerisinde, bu unsurun mevcut durumunun belirlenmesi içingerçekleştirilmesi gereken öncelikli basamaklar mevcuttur. Bunlar; gerekli bilgilerin toplanması,tespitlerin yapılması ve belgelendirme işlemidir. Görsel analiz yöntemi, krokilendirme ve fotoğraf çekimiile belgeleme çalışması desteklenmiş, yerel halk ile sözlü görüşmeler yapılmıştır. Çalışma hedefidoğrultusunda, bütüncül bir koruma anlayışı ile pekmez yapım geleneği, somut ve somut olmayankültürel miras kapsamında ele alınmıştır. Antalya/Çukurköy yerleşiminde kırsal mimari özellik taşıyanpekmez damları/işlikleri tespit edilerek, farklı mimari özellikleri kapsamında değerlendirilmiştir. Tespitedilen 15 adet yapıya dair elde edilen çeşitli veriler, belgelemenin gerekliliklerine göre; kroki çizimleri,fotoğraflar, tabloların ve tespit fişlerinin hazırlanması, karşılaştırmalar, vb. farklı şekillerde aktarılmıştır.
Abstract
In Anatolia, which has many different cultural elements, molasses, which is an important product of eating and drinking culture, traditional production methods and the areas / places belong to this culture should be qualified and evaluated with their original aspects. There are priority steps to be taken to determine the current state of this element which is a part of culture which is a variable and dynamic concept. These steps; collecting the necessary information, making the determination and documentation stages. Documentation was supported by visual analysis, sketching and photographing, and conversations were done with local people. In this way, the tradition of molasses production has been handled as tangible and intangible cultural heritage with a holistic conservation approach. In Antalya / Çukurköy settlement, molasses ateliers with rural architectural features were identified and evaluated with in the scope of different architectural features. Various datas, which has been identified about 15 ateliers were defined with sketch drawings, photographs, preparation of tables and identification documents, comparisons etc.
