Özet

Bu çalışmada derişiz broyler göğüs etlerinin bakteriyolojik ve duyusal kalitesi üzerine ışınlama (3 kGy), vakum paket ve sıcaklık (buzbolabı sıcaklığı) kombinasyonunun etkisi, araştırılmıştır. Denemeler açıkta ve vakum paketli kontrol grupları ile 3 kGy gamma radyasyon dozu ile ışınlanmış vakum paketli üç grup üzerinde yürütülmüştür. Örneklerin hijyenik kontrolü amacıyla belli aralıklarda toplam mezofll aerob ve toplam psikrofıl aerob bakteri sayıları belirlenmiş, pH analizleri yapılmıştır. Ayrıca, 0. ve 7. günlerde duyusal özellikleri panel oluşturularak saptanmıştır. Üç kGy dozla ışınlanan vakum paketli etlerin, buzdolabı sıcaklığında depolama süresi kontrollere göre 7-14 güne kadar uzatılmış, renk, koku, tad, görünüş ve yenilebilirlik özellikleri açısından kontrollere göre farklı bulunmamıştır.

Abstract

The effect of combined treatment of irradiation (3 kGy), vacuum packing and temperature (4 °C ± 1 °C) on sensory and bacteriological quality of broiler breast meat without skin was investigated. The experiments were carried out in three groups, which consisting of two controls (with or without vacuum packed) and one irradiated (3 kGy). The total mesophilic aerobic and psychrophilic aerobic bacterial counts were determined for the hy genie control of samples in certain intervals. pH analyses were made. The sensory properties of the samples were tested with the panel performed on 0. and 7. days. Three kGy dose of ionizing radiation, which extended shelf-life of broiler breast meat without skin at refrigeration temperature and vacuum packing, caused reduction bacterial count and extended shelf-life to 7-14 days. The use of combination treatments was observed to extent the shelf-life. The colour, taste, odour, appearance, edible characteristics of broiler breast meat without skin samples haven't been determined different from the control groups.
