Afyonkarahisar İli Semt Pazarlarında Satılan Süzme (Kese) Yoğurtların Kimyasal ve Mikrobiyolojik Özellikleri

Özet
Bu çalışmada, Afyonkarahisar ili halk pazarlarında tam yağlı süzme ya da kese yoğurdu olarak satışa sunulan konsantreyoğurtlardan farklı zamanlarda (mart ve eylül ayları arasında) alınan 50 adet örneğin, kimyasal ve mikrobiyolojikkalitelerinin Türk Gıda Kodeksi, Fermente Süt Ürünleri Tebliği’nde belirtilen kriterlere uygunluğunun araştırılmasıamaçlanmıştır. Örneklerin ortalama pH, titrasyon asitliği, yağ, kuru madde ve protein içeriği değerleri sırasıyla3.51±0.36, %2.09±0.11, %5.36±0.14, %23.88±2.17 ve %6.14±1.08 olarak bulunurken, ortalama toplam aerobikmezofilik bakteri, toplam aerobik psikrofilik bakteri, toplam koliform grup bakteri, maya/küf, laktik asit bakteri sayıları ileStaphylococcus aureus sayıları ise; 4.87±0.92, 3.01±0.61, 2.69±0.16, 4.64±0.14, 5.67±0.38 ve 2.59±0.28 log kob/golarak tespit edilmiştir. Ayrıca, örneklerin %16’sında (8 adedinde) Escherichia coli ve %12’sinde (6 adedinde) iseSalmonella spp. gelişimi belirlenmiştir. Araştırmada elde edilen sonuçlara göre; süzme yoğurt numunelerinin %26’sıprotein, %14’ü yağ içeriği, %100’ü maya/küf, %38’i toplam koliform grup bakteri sayısı, %14’ü Staphylococcus aureussayısı, %16’sı Escherichia coli ve %12’si de Salmonella spp. varlığı açısından ilgili tebliğlerde belirtilen kriterlereuymadığı tespit edilmiştir.
Abstract
The aim of this study was to investigate the compliance of whole fat strained yoghurt samples (n=50) sold in Afyonkarahisar (Turkey) local bazaars at different times (between March and September) for criteria specified at the Turkish Food Codex, Fermented Dairy Products Communiqué. The mean pH value, titratable acidity, fat, dry matter and protein contents of the samples were determined as 3.51±0.36, 2.09±0.11%, 5.36±0.14%, %23.88±2.17 and 6.14±1.08%, respectively. Also, total aerobic mesophilic bacteria, total aerobic mesophilic psychrophilic bacteria, total coliform group bacteria (TCGB), yeast/mold, lactic acid bacteria and Staphylococcus aureus counts were determined as 4.87±0.92, 3.01±0.61, 2.69±0.16, 4.64±0.14, 5.67±0.38 and 2.59±0.28 log cfu/g. In addition, eight of the yoghurt samples (16%) were found positive for Escherichia coli while six of the yoghurt samples (12%) were found positive for Salmonella spp. According to the results; the number of strained yoghurt samples that are incompliant with the criteria stated in the communiqué was 26% for protein content, 14% for fat content, 100% for yeast/mold count, 38% for TCGB count, 14% for Staphylococcus aureus count, 16% for Escherichia coli count and 12% for Salmonella spp. count.
