Özet
Türkiye, sahip olduğu özel ekolojik koşullar sayesinde farklı türlerde incir zenginliğine sahip ve aynı zamandakurutmalık ve sofralık incir yetiştiriciliğinde ve ticaretinde dünyada lider konumdadır. Özellikle kurutmaya en uygunolan Sarılop çeşidi incir, ülkemizde toplam incir üretiminin %90’ından fazlasına karşılık gelen önemli bir ihracatürünüdür. Kuru incir üretiminde gözlenen kalite problemleri yetiştiricilik, hasat, kurutma, işleme ve depolamasüreçlerinin hepsinden ileri gelebilmektedir. Bu yüzden, kuru incir üretiminde bahçeden itibaren işlenip ambalajlananakadar birçok zirai ve teknolojik önlem alınmaktadır. Kuru incirde önemli bir gıda güvenliği problemi olan aflatoksinbulunma riski bu konuda çok sayıda çalışma yapılmasını sağlamıştır. Gıda endüstrisi, kaliteli kuru incir üretimininsağlanması amacıyla alternatif yöntemler geliştirmekte ve bu yöntemlerin işletmelerde kullanılabilirliği testedilmektedir. Kuru incir işlemede metil bromitin yerine kullanılabilecek fümigasyon tekniklerin aranması, yeni analizyöntemlerinin geliştirilmesi ve kuru incir işleme hattında bilgisayar - algoritma tabanlı görüntüleme tekniklerininkullanımı söz konusu yeni teknolojilerden bazılarıdır. Bu derleme kapsamında, güncel çalışmalar takip edilerek kuruincir üretimi, kalite problemleri ve kuru incir işlemede geliştirilen yenilikçi yöntemler hakkında bilgi verilmiştir.
Abstract
Turkey is the leader in the world on the cultivation and trade of both dried and table figs, and a rich source of the different kinds of figs because of its special ecological conditions. Especially the Sarılop fig variety, which is the most suitable for drying, accounts more than 90% of the total fig production, and it is an important export product for the country. The quality problems in the production of dried figs may arise at various steps including plant growing, harvesting, drying, processing and storage conditions. Therefore, many agricultural and technological precautions are taken into account for the production of dried figs until they are processed and packaged, starting from horticultural activities. High aflatoxin risk, which is one of the most important food safety problems in dried figs, has accelerated scientific studies on this subject. The food industry develops alternative methods to ensure the production of high quality dried figs, and the feasibilities of these methods are tested regularly. The search for new fumigation techniques that can be used as an alternative to methyl bromide, development of new methods of analysis and the use of computer – algorithm based imaging techniques are some of the new technologies in the dried fig processing. Within the scope of this review, current information about dried fig production, quality problems and innovative methods developed in dried fig processing are presented in the light of the latest studies.
