Özet

Yemek, bir toplumun kendisini ve yaşam tarzını ifade şeklidir. Yemeğin yapımı için kullanılacak sebzenin tarlada ekiminden ve hasadından, hayvanın beslenmesinden, kesilmesinden mutfağa gelişine hatta tabakta servis edilişine kadar -temininden tüketiminegeçen pek çok aşama o toplumun tarihinden ve kültüründen izler taşır. O izleri doğru takip edebilir isek o toplumun binlerce yıl önce yaşamış insanlarından mesajlar duyabiliriz. Bu çalışmada “kokoreç ilk defa ne zaman yapılmış, nasıl yapılmış, bu lezzet nasıl keşfedilmiş” sorularının cevaplarını aradık. Balıkesir’in Göbel mahallesinden Divan-ı Lügat-it Türk’e kadar kokorecin izini sürdük. Ömer Seyfettin’in yazdığı “Lokanta Esrarı” adlı hikâyeyi okuduk. 1894 yılında Ayşe Fahriye tarafından yazılmış olup Osmanlı dönemine ait ikinci basılı yemek kitabı olan “Ev kadını” ile Tanzimat’tan beş yıl sonra (1844) Mehmed Kâmil tarafından yazılmış ve Osmanlı dönemine ait basılmış ilk yemek kitabı olan Melceü't-Tabbâhin (Aşçıların Sığınağı) isimli kitabını ve Dîvânu Lugâti’t- Türk’te yer alan “yörgemeç” ismiyle belirtilen yemek tarifini inceledik. Kokoreci incelediğimizde hayvancılıkla uğraşan ve yarı göçebe bir kültüre sahip olan Türk toplumunun yaşamış olduğu topraklardaki iklim, bitki örtüsü, ekonomik faaliyet türü gibi birçok faktörün izlerini görmek mümkündür. Hayvancılıkla geçinen bir toplum, yetiştirdiği hayvanın her ürününden faydalanmaya çalışır. Eti, sütü, yünü, bağırsağı vb. dolayısıyla yemek kültürü de hayvan ürünlerine göre şekillenecektir.

Abstract

Food is the way a society expresses itself and its way of life. Many stages, from the cultivation and harvest of vegetables to be used for the preparation of the dish, from feeding the animal, cutting it, coming to the kitchen and even serving it on a plate -from supply to consumption - bear traces of the history and culture of that society. If we can follow these traces correctly, we can hear messages from people of that society who lived thousands of years ago. In this study, we searched for answers to the questions “when kokoreç was made for the first time, how it was made, how this flavour was discovered”. We tracked “kokorec” from the Göbel neighborhood of Balıkesir to Divan-ı Lügat-it Türk. We read the story “Lokanta Esrarı” written by Ömer Seyfettin. “Ev kadını” printed in 1894, the Ottoman period second cookbook and was written by Ayşe Fahriye, and the first printed cookbook of the Ottoman period Melceü't- Tabbâhin (Aşçıların Sığınağı) written by Mehmed Kamil five years after the Tanzimat period (1844) and Dîvânu Lugâti’t-Türk “yörgemeç” we analyzed the recipe specified by name. When we examine “Kokoreç”, it is possible to see traces of many factors such as climate, vegetation, type of economic activity in the lands where the Turkish society, which is engaged in animal husbandry and has a semi-nomadic culture, lived. A society that makes a living by animal husbandry tries to benefit from every product of the animal it breeds. Meat, milk, wool, intestines, etc. therefore, food culture will also be shaped according to animal products.
