Özet

Makalede helva üç ana tatlandırıcı olan pekmez, bal ve şeker konu edilmektedir. Örnekleme ise üzerinden yapılmaktadır. Üç tatlandırıcının kullanıldıkları dönemler, tarifler ve tüketicilerinin kimler olduğu yönünde sorular sorulmaktadır. Bu şekilde, helvanın tatlandırıcılarının tercih edilmesinde toplumsal tabakanın etkisinin belirlenmesi amaçlanmaktadır. Çalışmada kullanılan veriler, yemek kitaplarından ve Türklerin yaşadıkları farklı coğrafyalarla tarihi dönemler üzerine yapılmış, tatlandırıcılarla helvaya değinen araştırmalardan elde edilmiştir. Makale dört kısımdan oluşmaktadır. İlk başlıkta antik bir tatlandırıcı olan pekmeze ve Eski Türklerdeki tatlı tüketimin sınıfsallığına değinilmektedir. İkinci başlıkta şekerin diğer tatlandırıcılardan ayrılma nedenleri, ticari bir ürün olması odağından ele alınmaktadır. Üçüncü bölümde tatlandırıcı tercihi, bal ve şekerin, özellikle fiyat açısından kıyaslanmasıyla tartışılmaktadır. Dördüncü başlıkta ise tatlandırıcı tercihinin ağırlıklı olarak estetik gerekçeleri üzerinde durulmaktadır. Çalışma sonunda yapılan çıkarımlardan bazıları şunlardır: Pekmez, en eski kültürel olarak üretilmiş tatlandırıcı olarak önce gösterişçi tüketimde yer almışsa da, zamanla bu işlevi şeker üstlenmiştir. Bu yüzden sonraki dönemlerde pekmez dar gelirlilik ve ekonomiklikle ilişkilendirilmiştir. Bal, şekerden daha ucuz olduğu için merkezdeki orta sınıflar kadar çevre yerleşim yerlerinde de kullanılmıştır. Buna rağmen günümüzde bal ve pekmez yeni bir toplumsal grup olan sağlıklı beslenme eğilimli tüketicilerin tatlandırıcı listesinde ilk sırayı paylaşmaktadırlar. Pahalı ve getirtilmesi güç olan şeker, sarayda ve zenginler arasında en çok tercih edilen tatlandırıcıydı. Kişi, grubuna uygun bir davranış olarak, bir tatlandırıcı tercih edebilmektedirler. Ama seçiminde damak tadı, yemeğin rengi ve başka amaçlar da etkili olabilmektedir.

Abstract

The subjects of this study is molasses (pekmez), honey and sugar that are there main sweeteners of halva. Some questions about to the periods their used, their recipes and consumers, asked to these three sweeteners. In this way, it is aimed to determine the effect of social stratification on the preference of the halva sweeteners. The data used in the study are obtained from cooking books and the researches on different geographies and historical periods that Turks lived, and mentioned sweeteners and halva. The study consists of four sections. In the first section, besides an antique sweetener pekmez, class consumption of sweet and sugar in Old Turks are mentioned. In the second section, the reasons for the separation of sugar from other sweeteners are considered by the focus of the fact that sugar is a commercial product. In the third section, the choice of sweetener is discussed by comparing honey and sugar, especially in terms of price. In fourth section, the aesthetics reasons of the choice of sweetener are emphasized. Some of the conclusions made at the end of the study are: Molasses, as the oldest culturally produced sweetener, has been involved in conspicuous consumption, but over time, this function has taken on sugar. For this reason, in the later periods pekmez was related with low-income and economy. Because honey is cheaper than sugar, it is used by middleclass in the center as well as peripheries. However nowadays honey and pekmez are shared the first place in the sweeteners list of a new social group ff consumers who tend to eat healthy. Sugar was most preferred sweetener in palace and among the rich peoples. Person may prefer a sweetener as an appropriate behavior to his own group. But the taste, the color of food, and the other intends can be effective in his choice.
