Özet
Amaç: Bu çalışmada toplumun et tüketimi ile ilgili tercihi ve beyaz et tüketimi ile demografik özelliklerin ilişkisinin araştırılması amaçlanmıştır. Gereç ve yöntem: Çalışma, 1997 yılında Konya il merkezinde küme örnekleme yöntemi ile belirlenen 467 hane üzerinde yapıldı. Bilgiler yüz yüze görüşerek derlendi. Et tüketiminin değerlendirilmesinde sığır ve davar eti 'kırmızı et', balık ve tavuk eti 'beyaz et' olarak ele alındı. Ayda 4 kez veya daha fazla beyaz et tüketimi 'yeterli' kabul edildi. Bulgular: Et tüketiminde ilk tercihin % 35.8 kırmızı et, % 34.0 tavuk eti ve % 24.8 balık eti olduğu ifade edildi. Araştırma popülasyonunun % 43.9'unun beyaz et tüketimi yeterliydi. Beyaz et tüketim sıklığı ile ekonomik durum ve evin hanımının öğrenim düzeyi arasında ilişki bulundu. Sonuç: Toplumda beyaz et tüketimi istenilen düzeyde değildir. Beyaz et tüketim oranını artırıcı politikalar geliştirilmelidir.
Abstract
Aim: In this study, it was aimed to investigate the preference of meat consumption and the relation between white meat consumption and demographic characteristics of the community. Methods: This study was carried out on 467 house hold selected by using cluster sample method in the city center of Konya in 1997. All data were obtained by interviewing. In determining meat consumption fish and poultry were accepted as "white meat" and lamb and veal as "red meat". White meat consumption of four or more times per month was accepted as sufficient. Results: The first choices in meat consumption were meat, poultry and fish were 35.8%, 34.0% and 24.8% respectively. 43.9% of the population has consumed sufficient white meat. The frequency of white meat consumption was found to be related to family income and housewife education level. Conclusion: In the population, white meat consumption is not at desired level. Therefore some programs to increase white meat consumption should be developed.
