Kars' ta satışa sunulan kaşar ve çeçil (civil) peynirlerinin bazı mikrobiyolojik ve kimyasal kalite nitelikleri

Özet
Bu çalışmada, Kars piyasasında satışa sunulan 30'ar adet kaşar ve çeçil peynirinin kimyasal ve mikrobiyolojik kalite nitelikleri incelenerek, Türk Gıda Kodeksine uygunlukları araştırılmıştır. Mikrobiyolojik analizler sonucunda kaşar ve çeçil peynirlerinde (sırasıyla ortalama) toplam aerob mezofil bakteri; 7.03 ve 7.25 logıokob/g düzeyinde, hijyen indeksi mikroorganizmalarından enterobakteriler; % 66.6'sında 4.30 ve % 70.0'inde 3.47 $log_{10}$ kob/g düzeyinde, koliform bakteriler; % 40'ında 3.91 ve % 20'sinde 4.35 $log_{10}$ kob/g düzeyinde, koagülaz pozitif stafilokoklar; % 46.6'sında 2.98 ve % 20'sinde 2.76 $log_{10}$ kob/g düzeyinde, sülfit indirgeyen anaeroblar; % 3.3'ünde 2.30 ve % 20'sinde 2.05 $log_{10}$ kob/g düzeyinde ve maya - küfler ise 6.04 ve 6.45 logıokob/g düzeyinde izole edilmiştir. Kimyasal analizler sonucunda ise (% ortalama); kaşar peynirlerinde kuru madde miktarı 64.4, yağ 21.5, yağsız kuru madde 42.8 ve protein 22.3 olarak bulunmuştur. Kaşar peyniri örneklerinde nişastaya da rastlanılmamıştır. Çeçil peynirlerinde ise; kum madde 52.4, yağ 15.6, yağsız kuru madde 36.8, ve protein 28.3 olarak bulunmuştur. Bu analizler sonucunda, kaşar peynirlerinin % 76.6'sının, çeçil peynirlerin ise % 33.3'ünün mikrobiyolojik yönden Türk Gıda Kodeksi'ne uygun olmadığı, bundan dolayı piyasada satışa sunulan kaşar ve çeçil peynirlerinin halk sağlığı açısından potansiyel bir risk taşıyabilecekleri kanısına varılmıştır.
Abstract
In this study, a total of 30 kashar and cecil cheeses sold in Kars markets were examined for their chemical and microbiological qualities and compatibility to Turkish Food Codex. In microbiological analysis, total mesophilic aerobic bacteria at the 7.03 and 7.25 $log_{10}$ cfu/g, Enterobacteriaceae as an hygiene index microorganism at the 4.30 $log_{10}$ cfu/g in the 66.6% and 3.47 $log_{10}$ cfu/g in the 70.0%, and coliform bacteria at the 3.91 $log_{10}$ cfu/g in the 40% and 4.35 $log_{10}$ cfu/g in the 20% of kashar and cecil cheese, respectively, were determined. Coagulase positive staphylococci as a food intoxication agent were determined at the level of 2.98 $log_{10}$ cfu/g in 46.6% of kashar cheese, and 2.76 log10cfu/g in 20% of cecil cheese. Contaminations with sulphyte reducing bacteria were determined at the level of 2.30 $log_{10}$ cfu/g in 3.3% of kashar cheese and 2.05 $log_{10}$ cfu/g in 20% of cecil cheese. Yeast and mould were isolated in 6.04 and 6.45 log10cfu/g in kashar and cecil cheese, respectively. In chemical analysis, amounts of (as an mean %) dry matter, fat, non-fat dry matter and protein for kashar cheese were 64.4, 21.5, 42.8 and 22.3, respectively. In addition, starch was not determined in kashar cheese. The same amounts for cecil cheese were 52.4,15.6,36.8 and 28.3, respectively. The result of these analysis, 76.6% of kashar cheese and 33.3% of cecil cheese were found incompatible as to the Turkish Food Codex's microbiologic criteria, therefore Kashar and Cecil cheese sold in the markets in Kars were been thought may carry a potantial risk for public health.
