Gastronomi ile Türk Halk Müziği İlişkisi Üzerine Betimsel Bir Araştırma

A Descriptive Study on the Relationship between Gastronomy and Turkish Folk Music

Özet

Gastronominin ilgi alanlarından biri de mutfak kültürüdür. Mutfak kültürü ile kültürün sözlü unsurlarından olan türkülerin ilişkilendirildiği bu çalışmanın amacı, gastronominin bir unsuru olan mutfak kültürünün yaşatılmasında ve aktarılmasında halk müziğinin rolünü saptamaktır. Bu amaca ulaşmak için türkülere konu olan ve türkü isimlerinde geçen yiyecek ve içecekler tespit edilmiş, tespit edilen bu yiyecek ve içeceklerin Türk mutfağındaki ve türkülerin geçtiği yörelerdeki kullanıldığı yerler açıklanmıştır. Türkü isimlerinde geçen yiyecek ve içecek isimlerine bakıldığında 67 adet türküde 25 farklı yiyecek ve içecek tespit edilmiştir. Bu yiyecek ve içecekler içerisinde 11 adet ile kahve en çok türkü isminde yer alan içecektir. Çalışmanın sonunda gastronomi alanında çalışan araştırmacılara ve sektörel bazda gastronomi alanında hizmet veren işletmeler ve mutfak şeflerine önerilerde bulunulmuştur.

Abstract

One of the interests of gastronomy is the culinary culture. The aim of this study, which is related to the folk songs of culture and culinary culture, is to determine the role of folk music in the survival of the culinary culture which is an element of gastronomy. In order to reach this aim, the food and beverages in the names of folk songs were determined and the places where these foods and beverages were used in the Turkish cuisine and the places where the songs were used were explained. 25 different foods and beverages were identified in 67 Turkish folk songs by the names of food and beverages names. In these foods and beverages, coffee the most common names with 11 pieces. At the end of the study, suggestions were given to researchers working in the field of gastronomy, to businesses and kitchen chefs serving sector of gastronomy.
