Anadolu’da Neolitik Dönemde Beslenme Alışkanlıkları ve Mutfak Kültürü

Özet

Mutfak kültürünün oluşmasında yaşanılan dönemler ve bu dönemlerde yerleşim yerlerindeki beslenme alışkanlıkları önemli yer tutmaktadır. Özellikle, Anadolu’nun mutfak kültürü üzerinde etkisinin fazla olduğu bilinmektedir. Bu sebeple bu çalışmada Paleolitik Dönem, Mezolitik ya da Anadolu için Epipaleolitik olarak adlandırılan dönem ve bu dönemin arkasından gelen Neolitik Dönem, mutfak kültürü açısından incelenmiştir. Araştırmada, basılı ve web katalog kaynaklarının döküman incelemesi yapılmıştır. Bu dönemlerdeki Anadolu’nun yerleşim yerleri, çalışmanın ana konusunu oluşturmaktadır. Anadolu’da Neolitik Dönemin (10.500-7000) incelenmesi ve bu dönemdeki beslenme alışkanlıklarının ortaya konulması gastronomi bilimi için de önemli katkılar sağlayacaktır. Ayrıca Neolitik Dönemde beslenme ihtiyacının nasıl ve ne şekilde karşılandığı ortaya konulacak ve tüketici hayattan üretici hayata geçişin insanoğlunun yaşamında ne gibi değişiklikler yaptığı belirlenecektir. Bu değişiklikler ve gelişme sürecinin yeni yaşam tarzlarını nasıl etkilediği de ortaya çıkarılacaktır. Araştırma sonucunda beslenme alışkanlıklarında ortaya çıkmış değişiklikler arasında; tahıl ürünlerinin üretimi ve hayvanların evcilleştirilmesinin olduğu görülmektedir. Ayrıca bu dönemde kullanılan mutfak ekipmanları, mutfak için ayırılan alanlar ve depolama koşulları bugünkü mutfak kültürünün temellerini oluşturduğu çalışma sonucunda elde edilmiş sonuçlar arasında sıralanabilir.

Abstract

The periods experienced in the formation of the culinary culture and the eating habits in the early period settlements play an important role. It is known that especially Anatolia has a great influence on the cuisine culture. Therefore,this study examines the Palaeolithic Period, the Mesolithic Period which is also named as the Epipaleolithic Period for Anatolia region, and the Neolithic Period in terms of cuisine culture. Document analysis of printed and web catalogue resources have been analysed during this study. The main context of this study is the settlements of Anatolia in these periods. Examining the Neolithic Period in Anatolia and revealing the eating habits in this period will make important contributions to the science of gastronomy. In addition, the study will reveal how the nutritional needs were met in the Neolithic Period and what triggered the transition from consumer life to productive life and the effects of this transition in human life. It will also be revealed how these changes and the development process affect new lifestyles. As a result of this research, the main differences in eating habits is production of grain products and domestication of animals. In addition, the kitchen equipment used in this period, the areas allocated for the kitchen and the storage conditions can be listed among the results that constitutes the basis of today's kitchen culture.
