Özet

Taştan pişirme ürünleri yapımı Doğu Karadeniz geleneksel kültüründe yaygın bir uygulamadır. Bunun büyük ölçekli bir örneği taş fırınlardır. Daha küçük ölçekli ürünler pileki denen taş ocaklar ile bunların üzerine konularak kullanılan sac taşlarıdır. Yazıda, bunların Trabzon’un Vakfıkebir ilçesinde üretildiği ortam ve üretim süreciyle ilgili gözlemler yer almaktadır. Günümüzde kaybolmakta olan geleneksel bir kültür varlığının bir parçası olan taştan küçük iki pişirme aracı ile ilgili bir tespit çalışması yapılmıştır.

Abstract

Hot-stone cooking is a common practice in Eastern Black Sea traditional culture. A large-scale example of this is the stone oven called taş fırın made by talented masons. Another type of hot stone cooking is pileki, a smaller scale stone container made by carving the stone as a huge bowl with a flat basement, in which the food is cooked once covered by a plane stone tablet called taş sacı. The article presents the observations of the environment and production process in the Vakfıkebir district, Trabzon, where these hot-stone cooking equipments are still produced. The findings and observations about these two types of hot-stone cooking are recorded and small cooking tools made of stone are documented since hot stone cooking is a part of the traditional cultural asset now disappearing.
