Risks and Prevention Studies in the Food Sector

Abstract

Due to the increasing population in the world, the need for food also increases. On the otherhand, it is expected that the developments in production technologies will naturally contributeto an increase in production to meet this increasing need. At this point, one of the three mostimportant issues is the risks arising directly from technology, the second is risks arisingfrom the man himself, and the third is the risks arising from the use of technology. In the foodindustry, these risks must be minimized or eliminated for reliable food production. In thiscontext, the greatest support is possible with the establishment of food safety systems.Cooperation in education and supervision of the three responsible stakeholders (state, producer,consumer) is crucial at each stage of the establishment or maintenance of food safety systems.Here, in this study, it was tried to examine the types, causes, sources, risk effective systems inthe food industry.

Özet

Dünyada artan nüfusa bağlı olarak gıda ihtiyacı da artmaktadır. Diğer yandan artan bu ihtiyacı karşılamak amacıyla üretim teknolojilerindeki gelişmeler yaşanması ve doğal olarak gelişen bu teknolojinin üretim artışına yansıması beklenmektedir. Bu noktada en önemli üç konudan birisi doğrudan teknolojiden kaynaklanan riskler, ikincisi insanın kendisinden kaynaklanan riskler üçüncüsü ise insanın teknolojiyi kullanımından kaynaklanan risklerdir. Gıda sektöründe, güvenilir gıda üretimi için bu risklerin en aza indirgenmesi ya da yok edilmesi gerekmektedir. Bu bağlamda, en büyük destek gıda güvenliği sistemlerinin kurulması ile mümkündür. Gıda güvenliği sistemlerinin kurulması ya da sürdürülmesi aşamalarının her birinde, riskleri etkisiz hale getirmek için sorumlu üç paydaşın (devlet, üretici, tüketici) eğitim ve denetimdeki işbirliği oldukça önemlidir. İşte bu çalışmada, gıda sektöründe ortaya çıkan risk çeşitleri, nedenleri, kaynakları, risk önlemede etkili sistemlerin incelenmesine çalışılmıştır.
