YİYECEK İÇECEK EĞİTİMİNDE GASTRONOMİ VE MUTFAK SANATLARI İLE KULİNOLOJİ PROGRAMLARINA DAİR BİR KARŞILAŞTIRMA

Abstract

Culinology is the blending of culinary arts and food science and technology. This program was introduced in 1996 by the Research Chefs Association. This new programme's education is given in universities. This concept emerged in the United States has yet to find a very highly favored by students and the food industry, although newly. In this study is the comparison of culnology program with gastronomy program. The aim of this study is to contribute to the training of gastronomy literature and is to determine whether the shortcomings of the gastronomy education and overcome these shortcomings. At the end of comparison, students' competencies and differences of these competencies which are defined in curricula has been revealed.

Kulinoloji, mutfak sanatları ile gıda teknolojisi ve biliminin harmanlanmasıyla Research Chefs Association tarafından 1996 yılında hazırlanan bir programdır. Amerika Birleşik Devletlerinde ortaya çıkmış bu programın henüz çok yeni olmasına karşın öğrenciler ve gıda endüstrisi tarafından oldukça rağbet gördüğü ve bazı üniversitelerde eğitiminin verildiği gözlenmektedir. Bu çalışmada, Kulinoloji programının gastronomi programı ile karşılaştırması ele alınmıştır. Çalışmanın amacı, gastronomi literatürüne katkıda bulunmanın yanı sıra, gastronomi eğitimi ile kulinoloji eğitiminin arasındaki farklılıkların ya da benzerliklerin ortaya konulmasıdır. Doküman analizine dayalı olarak yapılan karşılaştırma sonucu, müfredatlarda tanımlanmış yetkinlikler ve bu yetkinliklerin her iki programdaki farklılıkları ve benzerlikleri ortaya konulmuştur.
