Abstract
The field of food beverage industry because of multidisciplinary feature is researched by many researchers and faculty members using different ways. One of these ways is to research master thesis and doctoral dissertations. These resources point out crucial features of food beverage literacy and provide important information about development level of the literacy. In the research, the thesis and dissertations about commercial food beverage industry were selected for research topic. In this context, 179 thesis and dissertations were determined related to research topic conducted between 1988-2013. The aim of the research is to conduct a bibliometrics analysis of these thesis and dissertations. As a result of the analysis important findings were come out about food beverage industry. The findings consist of the most favorite topics, research type, research approach, research field, research department , universities, supervisors of the researches and etc.
Özet
Turizm sektöründe rekabet edebilmede nitelikli insan gücü büyük bir etkendir. Bu da kaliteli bir turizm eğitimiyle gerçekleştirilebilir. Turizm eğitiminde teorik bilginin yanı sıra pratik eğitimin de verilmesi gerekmektedir. Pratik eğitimin önemli bir parçasını işletmelerde yapılan staj programları oluşturmaktadır. Bu noktada otel işletmelerindeki sahip ve yöneticilerin staja yönelik çalışmaları kontrol etmeleri önemlidir. Bu araştırmada, otel sahip ve yöneticilerinin stajyer öğrencilerin performanslarını çeşitli açılardan değerlendirmelerine ilişkin görüşleri belirlenmiştir. Bu amacın gerçekleşebilmesi için 3, 4, 5 yıldızlı otellerin sahip ve yöneticilerinden 107 kişi üzerinde anket uygulanmıştır. Araştırmanın sonucunda otel sahip ve yöneticilerinin stajyer öğrencilerin performanslarını çeşitli açılardan değerlendirmelerine ilişkin görüşlerinin genellikle olumlu olduğu ve bu görüşlerle otel sahip ve yöneticilerinin eğitim düzeyi ile mesleki turizm eğitimi alma durumu arasında anlamlı bir farklılık olduğu görülmüştür.
