Use of Natural Plant Extracts in Control of Mold Contamination and Mycotoxin Production

Abstract
Molds that contaminate agriculture products in pre- and postharvest periods can deteriorate products, produce toxic substances called 'mycotoxins' and cause economic problems at national and international scales. Mycotoxin contamination in processed and/or unprocessed products is one of the most important problems of food industry that has not yet been solved. Many attempts had been made to prevent mycotoxin problem and some successful results were achieved. Treating products with plants or their natural extracts is one of the tested methods for preventing mold growth and toxin production. In this study, the effect of natural plant extracts such as thyme, clove, garlic, cinnamon etc. on mold growth and mycotoxin production was reviewed, and their potential use as a control strategy was discussed
Özet
Tarımsal ürünlere hasat öncesi ve sonrasında bulaşabilen küfler ürünlerin bozulmasına, insan ve hayvan sağlığı üzerinde olumsuz etkilere sahip "mikotoksin" üretilmesine ve iç ve dış pazarda önemli ekonomik kayıpların yaşanmasına neden olmaktadır. İşlenmiş ve/veya işlenmemiş ürünlerde küflenme ve mikotoksin varlığı gıda sanayinin halen kesin çözüme kavuşmamış en büyük sorunlarından biridir. Söz konusu problemin önüne geçebilmek için birçok yöntem denenmiş ve çözüme yönelik önemli başarılar elde edilmiştir. Küf gelişimi ve toksin oluşumunun azaltılması/önlenmesi için denenen yöntemlerden biri, gıdaların doğal bitkiler veya bu bitkilerin ekstraktlarıyla muamele edilmesidir. Bu çalışmada başta kekik, karanfil, sarımsak ve tarçın olmak üzere birçok bitkinin ve bu bitkilerden elde edilen ekstraktların küf gelişimi ve mikotoksin oluşumu üzerine etkilerini inceleyen çalışmalar derlenmiş ve bu yöntemin bir kontrol stratejisi olarak kullanılabilirliği hakkında konu ile ilgili tespitler ve değerlendirmelerde bulunulmuştur
