Local Food Preferences of Visitors within the Scope of Gastronomy Tourism: The Case of Tokat Province

Gastronomi Turizmi Kapsamında Ziyaretçilerin Yöresel Yiyecek Tercihleri: Tokat İli Örneği

Abstract

The aim of this study is to determine and evaluate the local food preferences of the tourists visiting the province of Tokat within the scope of gastronomic tourism. Descriptive research model was applied in the study. The research sample consists of 437 tourists visiting Tokat province in 2020, residing in different provinces and experiencing local foods. Questionnaire technique was used as a data collection tool in the research. The obtained data are presented in graphs by applying frequency distribution and percentage calculation in line with the purpose of the study. As a result of the analyzes and evaluations made, it is seen that the tourists visiting the province of Tokat mostly prefer the local foods such as "Tokat Kebab", "Stuffed Meat Leaf" and "Bat". On the other hand, the majority of the visitors participating in the study stated that they were satisfied with the local dishes of Tokat and that they would visit Tokat again within the scope of gastronomic tourism.

Özet

Bu çalışmanın amacı, gastronomi turizmi kapsamında Tokat ilini ziyaret eden turistlerin yöresel yiyecek tercihlerini belirlemek ve değerlendirmektir. Çalışmada betimsel araştırma modeli uygulanmıştır. Araştırma örneklemini 2020 yılı içerisinde Tokat ilini ziyaret eden farklı illerde ikamet eden yöresel yiyecekleri deneyimleyen ve 437 turist oluşturmaktadır. Araştırmada veri toplama aracı olarak anket tekniği kullanılmıştır. Elde edilen veriler, çalışmanın amacı doğrultusunda frekans dağılımı ve yüzde hesabı uygulanarak grafikler halinde sunulmuştur. Yapılan analizler ve değerlendirmeler sonucunda, Tokat ilini ziyaret eden turistlerin yöresel yiyeceklere ilişkin tercihlerinin en çok “Tokat Kebabı”, “Etli Yaprak Dolması” ve “Bat” gibi yiyeceklere yöneldiği görülmektedir. Öte yandan çalışmaya katılan ziyaretçilerin büyük çoğunluğu, Tokat’ın yöresel yemeklerinden memnun olduğunu ve gastronomi turizmi kapsamında Tokat’ı tekrar ziyaret edeceğini belirtmiştir.
