Periodic Analysis of Turkish Culinary Culture and An Evaluation on Contemporary Restaurant Menus: The Case of Istanbul

Abstract

Turks lived in different geographies throughout history and interacted with many cultures. This situation has caused a constantly changing and developing situation on Turkish cuisine and has created a unique and different culinary culture. The aim of this study is to examine the foods of different periods of Turkish cuisine on the basis of menu contents of restaurants serving Turkish cuisine in Istanbul. The sample of the research consisted of 56 restaurants in Istanbul serving Turkish cuisine and 276 different product types in the menus of these 56 restaurants were examined. Qualitative research methods were used in data collection and analysis. The content on the websites of these restaurants was tried to be analysed. As a result of the periodic analysis of the menus, the restaurants have mostly served the foods from the Ottoman period. The restaurants also offer products from foreign cuisines to a great extent. It has been determined that the most common food in restaurants is "shish kebab" from the Central Asian period. In addition, in the study, the cuisines that Turks have interacted with throughout history have been examined and the foods of the common culinary culture have been tried to be revealed.

Özet

Türk mutfağı, hem içinde yaşanılan coğrafyanın değişmesi hem de farklı mutfak kültürleri ile etkileşim sonucunda sürekli olarak değişime uğramıştır. Dolayısı ile Türk mutfağı üzerinde etkili olan bu durum beraberinde kendine has ve farklı bir mutfak kültürünü de oluşturmuştur. Bu çalışmanın amacı Türk mutfağının farklı dönemlerine ait yemeklerin, İstanbul’da bulunan Türk mutfağı konseptine sahip restoranların menü içerikleri bazında incelenmesidir. Bu amaç doğrultusunda araştırmanın örneklemini İstanbul’da bulunan ve Türk mutfağı servis eden 56 restoran oluşturmuştur. Bu 56 restoranın menüsünde bulunan 276 farklı ürün çeşidi incelenmiştir. Verilerin toplanmasında nitel araştırma yöntemleri tercih edilmiştir. Bu yöntemlerin en bilinenleri arasında olan pasif ve ikincil veri analizi ile, restoranların web sitelerinde yer alan içerikler çözümlenmeye çalışılmıştır. Türk mutfağı servis eden restoranların menüleri dönemsel olarak incelendiğinde, işletmelerin en fazla Osmanlı Dönemi’ne ait yemekleri sundukları görülmüştür. Çalışmada yabancı mutfaklara ait ürünlerin de önemli oranda sunulduğu belirlenmiştir. Restoranların menülerinde en fazla yer alan yemeğin Orta Asya Dönemi’ne ait “şiş kebap” olduğu belirlenmiştir. Ayrıca çalışmada Türk mutfağının tarih boyunca etkileşimde bulunduğu mutfaklar da incelenmiş ve diğer milletler ile sahip olunan ortak mutfak kültürüne dair yemekler de ortaya konulmaya çalışılmıştır.
