REFLECTIONS OF TECHNOLOGY IN THE KITCHEN: A BIBLIOMETRIC ANALYSIS ON COOKING ROBOT BASED ON THE R PROGRAM

Abstract

There has been an increase in the number of publications on robotic applications in recent years with the development of technology. The situation analysis of the literature, which includes the field of quantitative development of publications, sheds light on new researchers. There are many studies involving innovations within the framework of tourism and gastronomy, which is a new field in terms of robotic applications. In this study, it has been aimed to analyze the literature of the cooking robot concept, which is included in the application in tourism and gastronomy fields. By addressing previously published studies in the literature, current trends and chronological information can be revealed with the concept of bibliometrics. Therefore, in this study, bibliometric analysis of the articles published in the SCOPUS database on the concept of the cooking robot has been carried out with the help of the R program. Using the R program helps to present the articles in the literature with different dimensions to the readers. When the results are examined, it has been determined that there are few articles on robotic applications in the fields of gastronomy and tourism. It has been concluded that, in terms of cooperation and countries, several countries are pioneers that publish on the concept of cooking robot. In the framework of the research findings and results on the cooking robot, new researches that will be carried out to fill the gaps in this field will contribute to the development of the literature.

Özet

Teknolojinin gelişimi ile son yıllarda robotik uygulamalara ilişkin yayın sayısında artış yaşanmaya başlanmıştır. Yayınların nicel açıdan gelişmesi ile ilgili alanın yer aldığı literatüre dair durum analizinin yapılaması yeni araştırmacılara ışık tutmaktadır. Robotik uygulamalar açısından yeni bir alan olan turizm ve gastronomi çerçevesinde yenilikler içeren çok sayıda çalışma yer almaktadır. Bu çalışmada turizm ve gastronomi alanında uygulamaya dahil edilen aşçı robot kavramının alanyazın analizinin yapılması amaçlanmıştır. Literatürde daha önce yayınlanan çalışmaları ele alarak güncel trendleri ve kronolojik bilgisini bibliyometrik kavramı ile ortaya konulabilmektedir. Dolayısı ile bu çalışmada aşçı robot kavramına dair SCOPUS veri tabanında yayınlanan makalelerin R programı yardımıyla bibliyometrik analizi gerçekleştirilmiştir. R programının kullanılması alanyazında yer alan makalelerin farklı boyutları ile okuyuculara sunulmasına yardımcı olmaktadır. Elde edilen sonuçlar incelendiğinde gastronomi ve turizm alanında robotik uygulamalara dair az sayıda makalenin olduğu tespit edilmiştir. Aşçı robot kavramına ilişkin yayın yapan ülkeler ve işbirliği açısından birkaç ülkenin öncül olduğu sonucuna ulaşılmıştır. Aşçı robot konusunda gerçekleştirilen araştırma bulguları ve sonuçları çerçevesinde yeni araştırmaların literatürde yer alan boşluklara yönelik yapılması alanyazının gelişmesine katkı sağlayacaktır.
