THE USE OF CHOCOLATE AND COCOA IN RECIPE BOOKS PUBLISHED IN THE OTTOMAN AND TURKEY BETWEEN 1880- 1980

1880-1980 YILLARI ARASINDA OSMANLI VE TÜRKİYE’DE YAYIMLANAN TARİF KİTAPLARINDA ÇİKOLATA VE KAKAONUN KULLANIMI

Abstract

The historical process of the Ottoman Empire to the Republic of Turkey, and the process from the first Ottoman entry of cocoa to the sale, benefiting from the pleasure of eating and dessert, the printed recipe will be discussed. In the study, information about the cultivation and processing of the cocoa tree and its fruit, the production process of chocolate and powdered cocoa, the types of chocolate, the development of chocolate and cocoa in history are given. All recipe books published in a century, starting from the 1880 edition of the "Yeni Yemek Kitabı", the first Turkish recipe book with chocolate content, were examined within the scope of the study. When the recipe books published between 1880-1980 are examined using the document analysis method, it is seen that the use of chocolate and cocoa has changed and developed with the industrial developments, wars and commercial strategies. In the light of world-wide developments, "Theobroma cacao", which is the food of the gods, as the locals of Mesoamerica say, which is one of the foods that give us pleasure with its taste, adds flavor to the foods by taking part in our recipes.

Özet

Osmanlı Devleti döneminden Türkiye Cumhuriyeti’ne uzanan tarihi süreçte çikolata ve kakaonun Osmanlı diyarına ilk girişiyle başlayan, Türk yemek ve tatlı tarifleri içerisindeki kullanımına ait gelişim süreci, basılan tarif kitapları üzerinden ele alınmıştır. Çalışmada, kakao ağacı ve meyvesinin yetiştirilmesi, işlenmesi, çikolata ve toz kakaonun üretim süreci, çikolata çeşitleri, tarihte çikolata ve kakaonun gelişimi hakkında bilgilere yer verilmiştir. Çikolata içeriğine sahip olan ilk Türk tarif kitabı olan 1880 yılı basımı “Yeni Yemek Kitabı”ndan başlayıp, bir asırlık süreçte basılan tüm tarif kitapları çalışma kapsamında incelenmiştir. 1880- 1980 yılları arasında yayımlanan tarif kitapları doküman analizi yöntemi kullanılarak incelendiğinde çikolata ve kakao kullanımının yaşanan endüstriyel gelişmeler, savaşlar ve ticari stratejilerle değişip, geliştiği görülmektedir. Dünya çapında yaşanan gelişmelerin ışığında lezzeti ile bize haz veren gıdaların başında gelen Mezoamerika yerlilerinin deyimiyle tanrıların gıdası olan “Theobroma cacao” tariflerimizde yer alarak yiyeceklere lezzet katmaktadır.
