(ETHNIC RESTAURANTS IN GASTRONOMY TOURISM

Abstract

Ethnic restaurants are continuously increasing around the world and one of the contributing factors is immigration. These restaurants arise as a result of social, cultural, economic, and various concerns of those who migrate to a different country. Although they were initially opened only to appeal to the immigrant population, their services have been extended to other consumers as well revealing the importance and emergence of ethnic restaurants. Though, these restaurants were established due to immigration, the extension of their services has made them evolve into commercial restaurants. Currently, these restaurants are also supported by some countries (especially Asian countries) in order to promote gastronomic tourism. In this study, the importance of ethnic restaurants in gastronomic tourism is investigated.

Özet

Dünya genelinde etnik restoranların sayısında artış bulunmaktır. Etnik restoranlar, ilk olarak göçlerle dünyaya yayılmışlardır. Farklı bir ülkeye göç edenlerin sosyal, kültürel, ekonomik ve çeşitli kaygıları sonucu ortaya çıkan işletmelerdir. Başlangıçta sadece göçmen nüfusa hitap etmek adına açılan bu yerler; göçmen nüfusun dışında bulundukları ülkelerdeki diğer tüketicilere de hitap etmeye başlamışlardır. Gelinen nokta etnik restoranlara önemli bir talep oluşmaya başlamıştır. Dolayısıyla göçlerle dünyaya açılan bu restoranların, yayılımı göçlere bağlı kalmamış ve herhangi bir ticari restoran gibi sayıları artmıştır. Öte yandan bu restoranlar, gastronomi turizminin teşvik edilmesi amacıyla bazı ülkeler (özellikle Asya ülkeleri) tarafından da desteklenmektedir. Bu derleme araştırmasında da etnik restoranların gastronomi turizmindeki önemi araştırılmıştır.
