Investigations on the presence of some pathogenic microorganisms in Şavak white pickled cheeses

Abstract
This study was carried out for the presence of some pathogenic microorga¬nisms, such as Escherichia coli-1, Staphylococcus aureus and Listeria monocytoges in Savak white cheeses in Elazığ. 72 cheese samples were analysed 69.4 % of samples were found to contain total Coliforms and 51.4 % Escherichia coli-1. The incidence of Staphylococcus and Staphylococcus aureus were determined as 95.8 % and 55.6 % respectively. 7 Listeria innoca (9.7 %), and only 2 Listeria monocytogenes (2.8 %) were isolated from the samples. The mean pH value of samples was 5.17± 0.45. It was concluded that a considerable portion of Savak white pickled cheeses consumed in Elazığ were contaminated with pathogenic microorganisms and in consequence did not fit to standarts and were potentially hazardous to public health.
Özet
Bu araştırma, Savak salamura beyaz peynirlerde Escherichia coli-1, Staphylococcus aureus ve Listeria monocytogenes gibi bazı patojen mikroorganizmaların varlığını incelemek amacıyla yapıldı. Materyal olarak 72 adet peynir örneği kullanıldı. Örneklerin %69,4'ünün toplam koliform ve %51.4'ünün de Escherichia coli-1 mikroorganizmalarını içerdiği bulundu. İncelenen örneklerde, Staphylococcus mikroorganizmaları ile Staphylococcus aures'un sırasıyla %95.8 ile %55.6 oranında olduğu gözlemlendi. Listeria innocus 7 (% 9.7), Listeria monocytogenes ise yalnız 2 (%2.8) örnekten izole edildi. Peynir örneklerinde pH ortalama olarak 5.17 ± 0.45 değerinde belirlendi. Sonuç olarak, Elazığ'da tüketime sunulan olgun Savak salamura beyaz peynirlerinin önemli bir kısmının patojen mikroorganizmalar ile kontamine olduğu, bu nedenle aynı oranda standartlara uygunluk göstermediği ve halk sağlığı açısından potansiyel bir tehlike arzedebilecekleri sonucuna varıldı.
