Thiamin (Vitamin B1) and riboflovin (Vitamin B2) changes during the ribening stages of white cheese

Abstract
In this study; row milk was pasteurized at three different heat levels before the production of white cheese. These cheeses were filled up into jars containing 17% brine solution. Then they are stored in darkness in fridge for ripening. In this ripening period cheese samples were analyzed for thiamine and riboflavin contents with 15 days intervals from 0 to 45 days. As a result; 2.19%, 10.08%, and 28.15% thiamin loses were found for 15th, 30th, and 45th days, respectively for ripening period. Özet
Bu çalışmada çiğ sütler üç farklı pastörizasyon sıcaklığı uygulanarak pastörize edildi. Bu sütlerden beyaz peynir üretildi. Beyaz peynirler birer kilogramlık cam kavanozlara konuldu. Üzerlerine %17'lik konsantrasyonda salamura eklendi. Cam kavanozlar ışıktan korunarak buzdolabı koşullarında olgunlaşmaya bırakıldı. Peynirlerin olgunlaşma dönemlerinde 15 günlük periyotlarda tiamin, riboflavin analizleri yapıldı. Peynir örneklerinde, ortalama olarak 15. günde %2.19, 30. günde % 10.08, 45 gün sonunda ise %28.15 tiamin kaybı olduğu saptandı. Riboflavin kaybı ise ortalama olarak 15. günde %7.15, 30. günde %9.05, 45. gün sonunda ise % 12.36 olarak belirlendi.
