The effects of different rates of fat and sweetener combinations on the physical and sensory characteristics of energy reduced ice cream

Abstract
In this research, 16 different ice creams were made by using different combinations of fats (1%, 2%,4% and 5.5 %) and 4 different sweeteners (90 % aspartame + 10 % asesulfam-K, 80 % aspartame + 20 % asesulfam-K, 70 % aspartame + 30 % asesulfam-K, 60 % aspartame + 40 % asesulfam-K) used at a rate of 0.08 %. The pH, titratable acidity, overrun, penetrometer values, first dropping and complete melting, viscosity values, sensory properties of ice cream were measured. When ice cream containing 12.5 % fat was used as a reference, fat reduction was 52-92 % and calorie reduction was 40-58 %. The increase in fat rate in the combination was resulted in the reduction of overrun, penetrometer values and first dropping time (pO.05). Bu araştırmada 4 farklı yağ oranı ( % l, 2, 4 ve 5.5 ) ve toplamı % 0.08 olan 4 farklı tatlandırıcı kombinasyonu (% 90 aspartam + % 10 asesülfam - K, % 80 aspartam + % 20 asesülfam-K, % 70 aspartam + % 30 asesülfam-K, % 60 aspartam + % 40 asesülfam-K) kullanılarak 16 farklı içerikli dondurma üretilmiştir. Üretilen dondurmaların pH, titrasyon asitliği, hacim artışı, penetrometre değerleri, ilk damlama ve tamamen erime süreleri, viskozite değerleri, duyusal özellikleri incelenmiştir. % 12.5 yağlı normal dondurma referans ürün alındığında dondurmalarda yağ azaltılması % 52-92, kalori azaltılması % 40-58 olarak gerçekleştirilmiştir. Dondurmalarda yağ oranının artması hacim artışı, penetrometre değeri ve ilk damlama süresini azaltmış (p
