The effect of ca (Controlled atmosphere) and NA (normal atmosphere) storage on quality changes of differently harvested ''Hayward'' (Actinidia deliciosa) kiwifruits

Abstract

The aim of this study was to evaluate the effects of storage conditions [controlled (CA) (2% O2 + 5% CO2) and normal atmospheres (NA)] on “Hayward” kiwifruits harvested in different phases of maturity on fruit flesh firmness (FFF), total soluble solids (TSS), titratable acidity (TA), respiration rate and changes in the taste and the appearance during storage period. For this purpose ‘Hayward’ kiwifruits were harvested at the total water soluble solid contents of 4.5- 5.5%, 5.6-6.5% and 6.6-7.5%, and 8.5-9.5%, stored at 0 oC and 85-90% RH under NA and CA conditions for 5 months. It was determined that fruit flesh firmness of kiwifruits stored at 0 oC in CA was significantly higher than those in NA. It was identified that while the firmness of fruits stored in NA highly reduced in the first 2 months, CA storage slowed down this effect. The TSS contents of fruits increased with storage time and fruit maturity due to their different harvesting times. The respiration measurements showed that “Hayward” kiwi fruit had lower respiration rate at 20 °C. Fruit taste and appearance indexes did not change negatively. In conclusion, our data on both fruit flesh firmness and sensory qualities examined, indicated that second harvesting time (5.6-6.5%) is the ideal harvest maturity and CA is the best storage condition.

Bu çalışma ile farklı olgunluk aşamalarında hasat edilen “Hayward” kivi meyvelerinin NA (Normal Atmosfer) ve KA (Kontrollü Atmosfer) (%2 O2 ve %5 CO2 ) koşullarında muhafazaları sırasındaki meyve eti sertliği (N), SÇKM miktarı (Suda Çözünebilir Kuru Madde) (%), titrasyon asitliği (% sitrik asit), solunum hızı ve muhafaza süresince meydana gelen tat ve görünüş değişimlerine etkisi incelenmiştir. Bu amaçla SÇKM oranları “%4.5-5.5, %5.6-6.5, %6.6-7.5 ve %8.5- 9.5” olacak şekilde hasat edilen “Hayward” kivi meyveleri NA ve KA (%2 O2 ve %5 CO2 ) koşullarında 0 oC’de %85-90 nispi nemde 5 ay süre ile muhafaza edilmiştir. KA’da 0 oC’de muhafaza edilen meyvelerin meyve eti sertliğinin NA’da muhafaza edilenlere göre önemli ölçüde yüksek olduğu saptanmıştır. NA’da muhafaza edilen meyvelerin sertlikleri ilk 2 ayda hızla azalırken KA’nın bu etkiyi yavaşlattığı saptanmıştır. Muhafaza süresince ve meyve olgunluğu ilerledikçe derim zamanlarına bağlı olarak meyvelerdeki SÇKM miktarı artış göstermiştir. Solunum ölçümlerine göre “Hayward” kivi çeşidinin 20 oC’de düşük solunum hızına sahip olduğu belirlenmiştir. Meyvelerin tat ve görünüşünde herhangi bir olumsuz değişim gözlenmemiştir. Tüm kalite değişimleri dikkate alındığında en ideal derimin II. derim zamanı (%5.6- 6.5), en iyi muhafaza koşulunun ise KA muhafazası olduğu belirlenmiştir.
