THE IMPACT OF STORAGE CONDITIONS ON THE PHENOLIC CONTENT AND ANTIOXIDANT ACTIVITY OF POMEGRANATE LIQUORS PRODUCED BY MACERATION METHOD FROM HİCAZ POMEGRANATE

Abstract

Day by day the consumption of pomegranate and pomegranate products are increasing and gaining more importance due to its positive effects on health. In this study, the impact of storage at room temperature (+25 °C) and fridge temperature (+4 °C) on phenolic content and antioxidant activity of pomegranate liquors produced by maceration method from Hicaz pomegranate was examined. The total phenolic amount was evaluated by FolinCiocalteau method and the determination of antioxidant activity; trolox equivalent antioxidant capacity (TEAC) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) methods were used. The phenolic content was evaluated by high performance liquid chromatography (HPLC). In this study, 9 different phenolic acid amount differences, depending on the storage conditions, was determined. According to the results obtained; it was observed that total phenol and antioxidant activity of the liquors stored at room temperature increased about %15. However, both observed variables at the ones stored at fridge conditions decreased almost %20. In addition to these results; adding peelings and seeds to the liquors made a statistically important increase at observed variables; nevertheless adding aromatic drogs didn t make any statistically important difference at phenolic content or antioxidant capacity. Examining the phenolic profiles of the liquors; it was seen that the individual phenolic amounts stored at refrigerator conditions decreased. On the other hand, the samples stored at room temperature showed that the levels of gallic acid, protocatechuic acid, p - coumaric acid and quercetin increased but the others decreased.

Sağlık üzerine olumlu etkilerinden dolayı nar ve nar ürünlerinin tüketimi günden güne artmakta ve önem kazanmaktadır. Bu çalışmada, Hicaz narından maserasyon yöntemi ile elde edilen nar likörlerinin oda sıcaklığında (+25 °C) ve buzdolabı sıcaklığında (+4 °C) depolanmasının fenolik içerik ve antioksidan aktiviteye olan etkisi incelenmiştir. Toplam fenol miktarının belirlenmesinde Folin Ciocalteau metodu, antioksidan aktivite belirlenmesinde ise troloks eşdeğeri antioksidan kapasite (TEAC) ve 2,2-difenil-1-picrilhidrazil (DPPH) yöntemleri kullanılmıştır. Fenolik içeriğin belirlenmesinde yüksek performanslı sıvı kromatografisi (HPLC) kullanılmıştır. Çalışmada 9 farklı fenolik asit miktarının depolama koşullarına bağlı değişimi belirlenmiştir. Elde edilen sonuçlara göre oda sıcaklığında depolanan nar likörlerinin toplam fenol ve antioksidan aktivitesinde yaklaşık %15 artış gözlenirken, buzdolabı koşullarında depolanan likörlerde her iki değerde de ortalama %20 azalma görülmüştür. Buna ek olarak kabuk ve çekirdek ilavesinin incelenen özelliklerde istatistiksel olarak önemli bir artışa sebep olduğu; buna rağmen aroma arttırıcı olarak eklenen maddelerin bu özelliklerde arttırıcı yada azaltıcı etkiye sahip olmadığı belirlenmiştir. Likörlere ait fenolik dağılım incelendiğinde ise buzdolabında depolanan örneklerin fenolik madde miktarlarında azalma görülmüştür. Oda koşullarında depolanan örneklerde ise gallik asit, protokateşik asit, p-kumarik asit ve kuarsetin miktarlarında artma, diğer fenolik madde miktarlarında azalma görülmüştür.
