Effects of Eugenol and Thymol on chemical, microbiological and sensory quality of pasteurized butter

Abstract
In this study, effects of eugenol and thymol at 100 ppm concentration on chemical, microbiological and sensory attributes of pasteurized butter samples produced experimentally were investigated during storage period at different storage temperatures. Results indicated that there was no significant difference between control and other groups containing terpenes in terms of pH levels, thiobarbituric acid (TBA) and diacetyl values at both storage temperatures (4 ±1 and -20±1 oC) (p>0.05). However, a significant difference was found between groups stored at 4±1oC in terms of free fatty acid levels (p0.05). Peroxide value was below the detection limit in all samples. Numbers of total mesophilic aerobic bacteria, lactic Streptococcus spp. and lipolytic bacteria showed insignificant changes in all groups stored at 4±1oC (p>0.05). In groups stored at -20±1oC, however, there were significant differences between the storage days in terms of the numbers of bacteria mentioned above (p0.05). In sensory attributes, between groups or within groups, no changes were observed in appearance and consistency of the samples during storage period (p>0.05). Significant difference was also not found between groups in terms of taste and odor (p>0.05). As a result, it was concluded that 100 ppm of eugenol and thymol added into the samples did not show the expected significant effects on some chemical and microbiological parameters, and their effects on sensory attributes of the butter samples were insignificant during the storage period.

Bu çalışmada, deneysel olarak üretilen pastörize tereyağı örnekleri üzerine, 100 ppm oranında eugenol ve thymol’ün farklı muhafaza sıcaklıklarında (4 ±1 ile -20±1 oC), kimyasal, mikrobiyolojik ve duyusal kaliteye olan etkisi incelendi. Yapılan analizler neticesinde, pH değeri, tiyobarbitürik asit (TBA) sayısı ve diasetil değeri bakımından, kontrol grubu ile eugenol ve thymol ilaveli gruplar arasında her iki muhafaza sıcaklığında da istatistiki olarak önemli bir fark görülmedi (p>0,05). Ancak, serbest yağ asitleri miktarı açısından, 4 oC’de muhafaza edilen örnekler arasında önemli fark görülürken (p0,05). Araştırmada, deneysel tereyağı örneklerinde peroksit sayısı tespit edilebilir seviyenin altında bulundu. Örneklerdeki toplam mezofilik aerob mikroorganizma, Laktik Streptococcus spp. ve lipolitik mikroorganizma sayısı 4 oC’de muhafaza edilen tüm gruplarda muhafaza süresince önemli bir değişim göstermedi (p>0,05). Buna karşın, -20 oC’de muhafaza edilenlerde, muhafaza başlangıcında saptanan değer ile muhafazanın ilerleyen günlerinde tespit edilen değerler arasında önemli farklılıklar bulundu (p0,05). Yapılan duyusal analizde, gerek gruplar arasında, gerekse grup içinde muhafaza süresince görünüm ve kıvam kriterlerinde herhangi bir değişim gözlemlenmedi (p>0,05). Yine lezzet ve koku kriterlerinde meydana gelen değişimler de istatistiki olarak önemli bulunmadı (p>0,05). Sonuç olarak, 100 ppm oranında ilave edilen eugenol ve thymol’ün örneklerin muhafazası sırasında kimyasal ve mikrobiyolojik bazı parametreler üzerine beklenen etkiyi göstermediği ve duyusal açıdan ürünün nitelikleri üzerine etkisinin önemsiz olduğu sonucuna varıldı.
