Presence of Listeria monocytogenes and Salmonella spp. in Şavak Tulum Cheese

Abstract
In this study, in Şavak tulum cheese which were sold in Elazig province was examined for the presence of L. monocytogenes and Salmonella spp. For this purpose, 100 tulum cheese was used. L. monocytogenes was not found in any of the samples analyzed. However, Salmonella spp. Was detected in 12 (12%) tulum cheese samples. As a result, it was concluded that tulum cheese samples were produced under unhygienic conditions and that pose a potential threat in terms of public health.
Özet
Bu çalışmada, Elazığ ilinde satışa sunulan Şavak tulum peynirlerinde L. monocytogenes ve Salmonella spp'nin varlığı incelendi. Bu amaçla 100 adet tulum peyniri örneği kullanıldı. İncelenen örneklerin hiçbirinde L.monocytogenes'e rastlanılmadı. Ancak 12 (%12) adet tulum peyniri örneğinde Salmonella spp. tespit edildi. Sonuç olarak, tulum peyniri örneklerinin hijyenik olmayan şartlarda yapıldığı ve halk sağlığı bakımından potansiyel bir tehlike arz ettiği görüldü.
