Abstract
Mussels contain high amount of protein, low amount of fat and are rich in Omega- 3 fatty acids, vitamins and minerals. However, mussels may accumulate microorganisms and heavy metals in their edible tissues, since they filter off their food from the water. Therefore, the quality of water where they grow matters and they should be obtained from an approved vendor or a mussel aquaculture establishment. Mussels, having limited shelf life, should be prepared and served as soon as possible or otherwise should be stored properly. Mussels, which are included in many recipes throughout the world, are commonly consumed in Turkey in the form of fried mussel and stuffed mussels. Although it has a high flavor and nutritional value, it is known that some of the mussels and mussel dishes sold in the market have potential health hazards. Therefore, handling and selling conditions of stuffed mussels should be improved.
