Mineral and Heavy Metal Contents of Milk and Milk Products Produced in Erzurum Province According to Seasons

Abstract

In this study, the mineral content and heavy metal pollution levels of cow's milk and dairy products produced in Erzurum province and some districts were determined and how much these levels are affected from soil and plant structure are introduced. Ca, Na, K, Mg, Cu, Fe, Zn, Pb, Ni and Mn concentrations of samples taken from 335 cow milks, 82 milk products, 26 soils and 26 pasture-meadow plants are determined by using Inductive Couple Plasma Optic Emission Spectroscopy (ICPOES). In the examined cow milk samples, 1258.48±350.76 mg/kg of Ca, 415.51±167.17 mg/kg of Na, 1768.58±461.64 mg/kg of K, 107.33±31.19 mg/kg of Mg, 0.079±0.103 mg/kg of Cu, 0.64±3.45 mg/kg of Fe, 1.406±0.751 mg/kg of Zn, 0.031±0.048 mg/kg of Pb, 0.034±0.273 mg/kg of Ni and 0.022±0.11 mg/kg of Mn were determined. When compared with national and international values, it was found that there is no advanced pollution in heavy milk produced in Erzurum and its region. Bu çalışmada Erzurum ili merkezi ve bazı ilçelerinde üretilen inek sütleri ve süt ürünlerinin dönemsel olarak mineral maddeiçeriği ve ağır metal kirlilik düzeyleri ve bu değerlerin bölgenin toprak ve bitki yapısından ne düzeyde etkilendiği ortayakonulmuştur. Alınan 335 adet inek sütü, 82 adet süt ürünü, 26 adet toprak ve 26 adet çayır-mera bitkisinde Ca, Na, K, Mg, Cu,Fe, Zn, Pb, Ni ve Mn konsantrasyonları, İndüktif Eşleşmiş Plazma Optik Emisyon Spektroskopisi (ICP-OES) cihazı kullanılarakbelirlenmiştir. Erzurum ve yöresinde üretilen inek sütlerinde ulusal ve uluslararası değerlerle karşılaştırıldığındaağır metal açısından ileri düzeyde bir kirlilik olmadığı saptanmıştır. Bölge toprağında herhangi bir ağır metalle ileri düzeylerdekirlilik olmadığı belirlenmiştir.
