Abstract

The results of the surveys carried out in recent years offer different elements to reconstruct the appearance of the agricultural landscape in Cappadocia in the Byzantine era. Canalization systems have been identified as well as numerous structures used in the transformation of agricultural products - pressing machines, millstones etc., which provide specific indications on the production aims of the territory.Byzantine agricultural legislation, including Novella III, 20 by the emperor Nikephoros Phokas , and the importance of agricultural practice in monastic life confirm that the fertile land, broken up into small lots (valley floors, terraces), was cultivated with orchards, fruit trees, vineyards and cereals.
