Determination of Pysical, Chemical, Microbiological and Sensory Properties of Yoghurts Sold in Erzurum, Turkey

Abstract
In this study, the physical, chemical, microbiological and sensory properties of 40 yoghurt samples sold in Erzurum markets were determined. Results indicated that the mean total solid, fat, protein, titration acidity, SH, pH, serum separation and viscosity values of the yoghurt samples were 13.64%, 2.87%, 3.43%, 58.16, pH 4.09, 5.98 ml/25g and 8209 cP, respectively. Peroxidase test was negative for all yoghurt samples, while starch test resulted as negative for 3 samples. Less than 1% gelatin ratio was determined in 20% of yogurt samples. In the microbiological investigations, the mean Streptococcus thermophilus, Lactobacillus bulgaricus and yeast-mold counts were s 8.16, 8.50 and 4.12log kob/g, respectively. Also, yoghurt samples were examined in terms of sensory parameters, and the sample 21 was the most preferred sample in yoghurts by the panelists
Özet
Bu araştırmada, Erzurum piyasasında satışa sunulan 40 adet yoğurt örneğinin fiziksel, kimyasal, mikrobiyolojik ve duyusal özellikleri ortaya konulmuştur. Yapılan analizler sonucunda ortalama kurumadde, yağ, protein, SH, pH, serum ayrılması ve viskozite değerleri sırasıyla %13.64, %2.87, %3.43, 58.16, pH 4.09, 5.98 mL/ 25 g ve 8209 cP olarak belirlenmiştir. Peroksidaz testi, örneklerin tamamı için negatif sonuç verirken, nişasta testi 3 örnek için pozitif olarak neticelenmiştir. Buna karşılık, yoğurt örneklerinin %20'sinde %1'den az oranda jelatin tespit edilmiştir. Yapılan mikrobiyolojik incelemelerde, ortalama Streptococcus thermophilus sayısı 8.16 log kob/g, Lactobacillus bulgaricus sayısı 8.50 log kob/g ve maya-küf sayısı 4.12 log kob/g, olarak belirlenmiştir. Ayrıca yoğurt örnekleri, duyusal parametreler bakımından incelenmiştir ve örnekler arasında en çok beğenilen yoğurt örneğinin 21 nolu örnek olduğu tespit edilmiştir
