A Study on the Chemical Composition of (Rapana thomasiana crosse) from the Black Sea (Turkish with English Abstract)

Abstract
The chemical composition of Rapana thomasiana crosse was investigated in this study. It has been determined as 75.92% water, 12.95% protein, 1.65% fat, 1.40% ash in the processed Rapana thomasiana crosse. The contents of Na, K, Zn, Cu, Mn and P were determined as 410, 165, 48, 26, 3, 0.65 mg/kg respectively. The distribution of fatty acids was also found as 10.02% palmitic acid, 47.31% linoleic acid, 17.80% linolenic acid, 23.75% arachidonic acid, 1.14 others.
Özet
Çalışmada deniz salyangozu (Rapana thomasiana crosse) nin bileşiminin belirlenmesi amaçlanmıştır. Deniz salyangozunun ortalama %75.92 su, %12.95 protein, %1.64 yağ ve %1.40 kül içerdiği saptanmıştır. Na, K, Zn, Cu, Mn ve P miktarları sırasıyla 410, 165, 48, 26, 3 ve 0.65 mg/kg olarak belirlenmiştir. Yağ asitleri dağılımı ise ortalama olarak %10.02 palmitik asit, %47.31 linoleik asit, %17.80 linolenik asit, %23.73 araşidonik asit, %1.14 diğerleri olarak saptanmıştır.
