PRODUCTION OF BREAKFAST ZAHTER IN DIFFERENT FORMULATIONS AND DETERMINATION OF SOME QUALITY CHARACTERISTICS

FARKLI FORMÜLASYONLARDA KAHVALTILIK ZAHTER ÜRETİMİ VE BAZI KALİTE ÖZELLİKLERİNİN BELİRLENMESİ

Abstract

Breakfast zahter is a traditional food which is prepared by mixing ground roasted nuts and various spices and consumed with olive oil in breakfast in the eastern mediterranean region of our country, especially in Kilis, Gaziantep and Hatay. In this study, it was aimed to develop new breakfast zahter formulas by adding different rates of thyme and menengic fruit. In this direction, 15 different formulations Breakfast Zahter were produced in. In addition, the production of the control sample was carried using the same formulation with the exception of thyme and menengic fruit. The sample (M4 + K4) with 2% menengic paste and 2% thyme plant got the higest score in sensory analysis. Moisture, ash, protein, fat, carbohydrate, raw fiber, phytic acid, antioxidant activity, total phenolic substance and energy values were determined on that sample. All other properties except protein were found higher than the control sample.

Özet

Kahvaltılık Zahter ülkemizin Doğu Akdeniz Bölgesinde özellikle Kilis, Gaziantep ve Hatay çevresinde sabah kahvaltılarında zeytinyağı ile birlikte tüketilen geleneksel bir kuruyemiş baharat karışımıdır. Bu çalışmada, kekik bitkisi ve menengiç meyvesinin değişik oranlarda katılması suretiyle yeni kahvaltılık zahter formüllerinin geliştirilmesi amaçlanmıştır. Bu doğrultuda toplam 15 farklı formülasyonda Kahvaltılık Zahter üretilmiştir. Ayrıca formülasyonda kekik bitkisinin ve menengiç meyvesinin bulunmadığı kontrol örneğinin üretimi de gerçekleştirilmiştir. Örneklerde yapılan duyusal analiz sonucunda en çok beğenilen M4+K4 (menengiç meyvesinin %2 ve kekik bitkisinin %2 kombinasyonunun kullanıldığı örnek) örneğinde nem, kül, protein, yağ, karbonhidrat, ham lif, fitik asit, antioksidan aktivite, toplam fenolik madde ve enerji değerleri belirlenmiştir. Protein hariç diğer tüm özelliklerde tespit edilen değerler kontrol örneğinden yüksek bulunmuştur.
