Comparative Analysis of Different Deep Learning Techniques for Automated Classification of Fruits and Vegetables

Abstract
Automatic quality control of food and agricultural products is a challenging problem that needs to be solved accurately, quickly and objectively due to the high quality and safety standards of the sector. The solution to this problem requires automatic classification of products prior toquality control. Based on this need, this study focuses on the problem of automatic classification of fruits and vegetables with the help of machine vision. For this purpose, the classification performance of popular deep learning architectures AlexNet, Vgg16, GoogLeNet, ResNet18, ResNet101, SqueezeNet and ShallowNet were examined using the original and distorted versions of a publicly available data set where the latter include applyingGaussian noise, randomnoise, and brightness changes. In the study, the performances of deep learning architectures were evaluated with accuracy, precision, sensitivity, F-scoreand runtime with a cross-validationmethodologyusing a personal laptop computerand Matlab. Experimental results have shown that ShallowNet with its low network depthand simple architecture achieves reasonable performancesand is more robust to distortions,whileSqueezeNet emerges as a promising solutionespecially in the absence of severe distortionswith its highaccuracy levels above 80%andlow number of trainable parameters. It has also been observed that the GoogLeNet architecture is more robust to Gaussian noise, the Resnet101 architecture to salt and pepper noise, and the SqueezeNet architecture to brightness changes. Repeating the experiments with a larger data set containing more fruit and vegetable categories in the future is important and necessary both to test the validityof the above inferences and to offer a more realistic machine vision solution to the industry.

Gıda ve tarım ürünlerinin otomatik kalite kontrolü sektörün yüksek kalite ve güvenlik standartları nedeniyle ürün kalitesinin doğru, hızlı ve nesnel şekilde saptanmasına ihtiyaç duyulan ancak çözümü zor bir problemdir. Bu problemin çözümü kalite kontrolden önce ürünlerin otomatik sınıflandırılmasını gerektirmektedir. Bu ihtiyaçtan yola çıkılarak sunulan bu çalışmada makineyle görü yardımıyla meyve ve sebzelerin otomatik sınıflandırılması problemine odaklanılmıştır. Bu hedefle halka açık bir veri setinin orijinal ve Gauss gürültüsü, tuzve biber gürültüsü, parlaklık değişimi olmak üzere farklı bozulmalar uygulanmış halleri kullanılarak AlexNet, Vgg16, GoogLeNet, ResNet18, ResNet101, SqueezeNet ve ShallowNet popüler derin öğrenme mimarilerinin sınıflandırma başarımları incelenmiştir. Çalışmada derin öğrenme mimarilerinin performansları kişisel bir dizüstü bilgisayar kullanılarak Matlab ortamında çapraz doğruluk yaklaşımıyla doğruluk, kesinlik, duyarlılık,F-ölçütüve çalışma süresi ile değerlendirilmiştir. Deneysel sonuçlar ağ derinliği düşük, basit mimariye sahip ShallowNet’in makul başarımlara ulaştığını ve bozulmalara daha gürbüz olduğunu, resimlerde şiddetli bozulmaların olmadığı durumlarda eğitilebilir parametre sayısı düşük ve derin bir ağ olan SqueezeNet mimarisinin ulaştığı %80’in üzerindeki yüksek doğruluk seviyeleri ile umut vadettiğini göstermiştir.Ayrıca, Gauss gürültüsüne GoogLeNet mimarisinin, tuz ve biber gürültüsüne Resnet101 mimarisinin ve parlaklık değişimlerine ise SqueezeNet mimarisinin daha gürbüz oldukları gözlenmiştir.Gelecektedaha çok meyve-sebze kategorisi içeren daha geniş bir veri seti ile deneylerin tekrarlanmasıhem yukarıdaki çıkarımların doğruluğununsınanmasıhem de sektöre daha gerçekçi bir makineyle görü çözümü sunulmasıadına önemli ve gereklidir.
