An Evaluation of Gastronomy Education at Secondary and Higher Education Level in Turkey

Türkiye’de Ortaöğretim ve Yükseköğretim Düzeyindeki Gastronomi Eğitiminin Değerlendirilmesi

Abstract

This study aims to descriptively evaluate the gastronomy education given by secondary and higher education institutions (undergraduate, graduate, postgraduate). It has been determined that gastronomy education at the secondary level is provided under the scope of catering services field within the Vocational Technical Anatolian High School and the Multi Programmed Anatolian High School. At the undergraduate and graduate levels, gastronomy education is multiplied in different institutions and under different names. It is noteworthy that the number of graduate and doctoral programs related to gastronomy is on the increase at the graduate level. In the direction of all these facts, it can be stated that the number of universities, faculties, high schools and departments has increased rapidly due to the serious demand for education of gastronomy at secondary and particularly higher education levels.

Özet

Çalışmada örgün eğitim çerçevesinde ortaöğretim ve yükseköğretim kurumları tarafından verilen gastronomi eğitiminin sayısalveriler ışığında değerlendirilmesi amaçlanmaktadır. Ortaöğretim düzeyinde gastronomi eğitiminin Mesleki ve Teknik AnadoluLiseleri ile Çok Programlı Anadolu Liseleri bünyesindeki yiyecek içecek hizmetleri alanı altında verildiği tespit edilmiştir. Ön lisansve lisans düzeyinde ise gastronomi eğitiminin farklı kurumlar bünyesinde ve farklı isimler altında verildiği göze çarpmaktadır.Lisansüstü düzeyinde de gastronomi ile ilgili yüksek lisans ve doktora programları sayısının giderek arttığı dikkat çekmektedir. Tümbunlar ışığında ortaöğretim ve özellikle yükseköğretim düzeyinde gastronomi eğitimine olan talebin önemli ölçüde arttığı ve bunabağlı olarak üniversite, fakülte/yüksekokul ve bölüm sayısının hızlı bir şekilde artış gösterdiği söylenebilir.
