The Study of Internship Satisfaction of Tourism and Gastronomy Students Taking Compulsory Internship Training: The Case of Eastern Mediterranean University

Abstract
In this study, it is aimed to examine the perceptions of satisfaction about the internship experiences of students studying at the departments of “Tourism and Hotel Management”, “Cookery” and “Gastronomy and Culinary Arts” at associate and bachelor degrees in the intuitions such as accommodation and restaurant; therefore, it is significant to search the perceptions of satisfaction of students in their internship experiences. The scope of the study comprises of students studying at the departments of “Tourism and Hotel Management”, “Cookery” and “Gastronomy and Culinary Arts” at associate and bachelor degrees at Eastern Mediterranean University. In the research, simple random sampling method was used among probabilistic sampling methods. In accordance with the purpose of the study, a questionnaire was conducted, and data were collected from 212 students. SPSS program was used to analyse the results of the study. Within the scope of the study, the effect of the internship of the students studying in tourism and hotel management, cookery, gastronomy and culinary arts at associate and bachelor degrees with the demographic variables of the compulsory internship was examined, and aimed to determine the effects of the related internship process on the future career preferences of the students. The results of the study show that the satisfaction of the students at the time of internship is not affected by their gender, age, departments and internship area; however, it directly affects the fee that students receive at the time of internship and the region they live in. The compulsory internship practices during the education of the students affect their future career options, and close internship places to students’ home, the wage and working environment are also effective.
Özet
Bu araştırmada, ön lisans ve lisans düzeyinde “Turizm ve Otelcilik”, “Aşçılık” ve “Gastronomi ve Mutfak Sanatları” eğitimi alan öğrencilerin konaklama, restoran vb. işletmelerindeki staj deneyimlerine ilişkin memnuniyet algılarının incelenmesi hedeflenmektedir. Bu yüzden, öğrencilerin staj deneyiminde yaşadıkları memnuniyet algılarının araştırılması araştırmanın önemini oluşturmaktadır. Çalışmanın evrenini, Kuzey Kıbrıs Türk Cumhuriyeti’nde bulunan Doğu Akdeniz Üniversitesi’nde ön lisans ve lisans seviyesinde eğitim alan “Turizm ve Otelcilik”, “Aşçılık” ve “Gastronomi ve Mutfak Sanatları” bölümlerinde okuyan 552 öğrenci oluşturmaktadır. Araştırmada, olasılıklı örnekleme yöntemlerinden, basit tesadüfi örnekleme yöntemi kullanılmıştır. Çalışma amacına uygun şekilde, anket formu oluşturulup, 212 öğrenciden veriler toplanmıştır. Çalışmanın sonuçlarının analizi için, SPSS programı kullanılmıştır. Çalışma kapsamında, turizm ve otelcilik, aşçılık, gastronomi ve mutfak sanatları bölümünde okuyan öğrencilerin ön lisans ve lisans eğitimi alırken yapmış oldukları zorunlu stajların cinsiyet, yaş, bölüm, staj alanı, yaşanılan yer, aylık maaş değişkenleri arasındaki etki incelenmiş, ilgili staj sürecinin öğrencilerin gelecekteki kariyer tercihlerine etkilerinin belirlenebilmesi hedeflenmiştir. Çalışmanın sonuçları göstermektedir ki, öğrencilerin staj zamanında gösterdiği memnuniyeti cinsiyeti, yaşları, okuduğu bölümleri ve yaptığı staj alanı tarafından etkilenmemektedir. Ancak, öğrencilerin yaşadıkları bölge ile staj zamanında aldıkları ücret doğrudan etkilemektedir. Almış oldukları eğitim boyunca zorunlu olarak yapmış oldukları staj uygulamaları öğrencilerin gelecekteki kariyer seçeneklerine etki etmekte olup, staj yerinin yaşamış oldukları şehre yakın olması ve staj döneminde aldıkları ücret ve çalışma ortamı memnuniyetlerinde etkili olmaktadır.
