The Situation of Food Industry Based on Animal Production in Diyarbakır Province

Abstract

The aim of this survey was to determine the current status of the animal products processing (meat,milk and eggs) industry: raw material supply, production, quality, technical infrastructure, capacity utilizationsituation, marketing conditions and expectations from the public authority. A total of 16 animal food productsmanufacturing company were visited and the study was carried out with frm owners or responsible staffs by faceto face interviews. The questionnaire consisting of 34 questions directed to the related personels and the answerswere recorded. We obtained that there were 16 animal food products processing frms in Diyarbakir province, 8 ofthem were dealing with milk and milk products processing and 7 of them were dealing with egg packaging andone of them was with meat and meat products processing. Our results showed that technical facilities were foundadequate, enterprise owners have enough production capasity but, their plant utilization is quite low for yoghurt,ayran, white cheese, butter and egg packaging as %16.6, %49.1, %11.7, %25 and %46.1, respectively. The unfaircompetition was the most important business problem for the frms as 85.7% and this subject was the secondimportant problem for the frms as 14.3%. As a result, animal products processing companies in Diyarbakır haveoperate with low capacity utilization rates and the main reason of this is determined as unfair competition betweencompanies.

Özet

Bu çalışma Diyarbakır ili hayvansal gıda (et, süt ve yumurta) işleme tesislerinin mevcut durumu, hammadde temini, üretim, kalite, teknik altyapı, kapasite kullanım durumu ve pazarlama koşulları ile kamu otoritesindenbeklentileri ortaya koymak amacıyla yürütülmüştür. Bu araştırma kapsamında, Diyarbakır ‘da bulunan toplam16 gıda ürünleri imalat ve işleme tesisi ziyaret edilerek, işletme sahipleri veya sorumlu yöneticileri ile yüz yüzegörüşmeler gerçekleştirilmiştir. Toplam 34 sorudan oluşan anket soruları işletmelerdeki yetkililere yöneltilmiş veelde edilen veriler kayıt altına alınarak değerlendirilmiştir. Araştırmada; Diyarbakır’da hayvansal gıdalarla ilgilitesislerden 8’inin süt ve süt ürünleri işleme, 7’sinin yumurta paketleme tesisi ve birinin et ve et ürünleri işlemetesisi olduğu saptanmıştır. Bu mevcut tesislerde toplam 115 kişinin istihdam edildiği belirlenmiştir. Tesislerinkapasite kullanım oranları (KKO) yoğurtta %16.6, ayranda %49.1, peynirde %11.7, tereyağında %25 ve yumurtapaketlemede %46.1 seviyesinde oldukça düşük olduğu tespit edilmiştir. Haksız rekabet sorununun işletmelerin%85.7’si için en önemli sorun olduğu, %14.3’ü için ise bunun ikinci sırada önem arz ettiği saptanmıştır. Sonuçolarak, Diyarbakır’da hayvansal ürün işleyen tesislerin düşük kapasiteyle çalıştıkları ve frmalar arası haksızrekabetin, bu sonucun ortaya çıkmasında etkili olduğu belirlenmiştir
