Seasonal Variation and Meat Composition of Blue Crab (Callinectes sapidus, RATHBUN, 1896) Caught in İskenderun Bay, North-East Mediterranean

Abstract
The seasonal variation and meat composition of blue crabs (Callinectes sapidus Rathbun, 1896) were investigated. Twenty (10 male, 10 female) crabs were used each season. The total weight of the samples was estimated and the ratios of crude protein, lipid, dry matter and crude ash were obtained from meat of the body and claws. Comparatively higher values of dry matter, crude ash and lipid were determined for the claw meat of males in winter. In the same season the crude protein and lipid composition of claws and crude ash of body meat were higher in females than other meat. The highest ratio of crude protein (21.96%) from female body meat and dry matter (26.15%) from male cheliped meat was in spring. Crude ash (3.28%) was highest for female body meat in winter and lipid (3.89%) was highest for male body meat in spring.

Bu araflt›rmada ‹skenderun Körfez’inden yakalanan Mavi Yengeç (Callinectes sapidus RATHBUN, 1896)’in et kompozisyunu ve mevsimsel de¤iflimleri incelenmifltir. Bu amaçla her mevsim 20 adet (10 difli, 10 erkek) birey kullan›lm›flt›r. Bireylerin toplam a¤›rl›¤› al›nm›fl, daha sonra gö¤üs ve k›skaç etlerinde ham protein, lipit, ham kül, kuru madde düzeyi tespit edilmifltir. K›fl mevsiminde erkek bireylerin k›skaçlar›ndaki kuru madde, ham kül ve lipit de¤erleri, gö¤üs etlerine göre yüksek bulunmufltur. Diflilerde ise ayn› mevsim için k›skaç etlerindeki ham protein ve lipit de¤erleri, gö¤üs etinde ise ham kül düzeyi di¤er organa göre yüksek bulunmufltur. En yüksek ham protein de¤eri % 21,96 ile ilkbaharda difli bireylerin gö¤üs etinde, kuru madde % 26,15 ile ilkbaharda erkek k›skac›nda, ham kül % 3,28 ile k›fl›n diflinin gö¤üs etinde, lipit ise % 3,89 ile ilkbaharda erkek bireylerin gö¤üs etinde saptanm›flt›r.
