Shadow of Syrian Migration in Kilis Province Local Foods

Abstract

The totality of values created by individuals in the society in the historical process expresses the culture of the society. Food becomes a part of that society's culture over time and appears as a food culture. Various changes may occur in the process of food culture, especially migrations can affect the culture of the current region with a socio-cultural transfer. In this context, considering its geographical location, Kilis province already has a rich food culture carrying the effects of Aleppo cuisine and as the only province with more Syrians than its own population after the migration, It was carried out to determine the level of awareness of current food cultures and cuisines. The survey technique was used in the study. According to the findings, Kilis food can be explained by Syrian food. It is concluded that the relationship between the dependent and independent variables is not significant. It was determined that one-unit increase in the awareness of the Kilis dishes of the participants decreased the awareness of the Syrian dishes.

Özet

Toplumdaki bireylerin tarihsel süreç içerisinde oluşturdukları değerler bütünü toplumun kültürünü ifade etmektedir. Yemekler de zamanla o toplumun kültürünün bir parçası haline gelmekte ve yemek kültürü olarak karşımıza çıkmaktadır. Yaşanan göçler mevcut yörenin kültürüne sosyo-kültürel bir aktarımla etkide bulunabilmekte, bu durum yemek kültüründe süreç içerisinde çeşitli değişiklikler meydana gelebilmektedir. Bu kapsamda çalışma coğrafi konumuna bakılınca Kilis ili hali hazırda Halep mutfağının etkilerini taşıyan zengin bir yemek kültürüne sahip olmakla beraber yaşanan göç sonrasında kendi nüfusundan fazla Suriyeli barındıran tek il olarak mevcut yemek kültürleri ve mutfakların bilinilirlik düzeylerini belirlemek amacıyla yapılmıştır. Çalışmada anket tekniğinden yararlanılmış olup elde edilen bulgulara göre Kilis ili yemekleri Suriye yemekleri tarafından açıklanabilmekte ve bağımlı ve bağımsız değişken arasındaki ilişkinin anlamlı olmadığı sonucuna ulaşılmıştır. Katılımcıların Kilis yemeklerinin bilinirliğindeki bir birimlik artış Suriye yemeklerinin bilinirliliğinde azalış sağladığı belirlenmiştir.
